Root Beer Float Cupcakes: Have a rootin tootin good time at your Western Themed Party with these fun cupcakes! Even though this cupcake recipe starts with a vanilla cake mix, one bite of these delicious Root Beer Float Cupcakes and you’ll forget all about them being semi homemade.

HOW TO MAKE THESE ROOT BEER FLOAT CUPCAKES FROM SCRATCH
Ingredients (scroll down for the printable version↓↓↓)
- ¾ cup unsalted butter, softened
- 3 large eggs, room temperature
- 2½ cups all-purpose flour
- 2½ teaspoon baking powder
- ½ teaspoon salt
- 1½ cups granulated sugar
- 1¼ cups root beer, room temperature
- 1 tablespoon root beer extract
- ½ teaspoon vanilla extract
Directions
- Preheat oven to 350°.
- Line cupcake tin with liners (22).
- In a large bowl whip butter until light and fluffy (about 2 minutes).
- Add one egg at a time making sure each egg is incorporated.
- In a medium bowl whisk together flour, baking powder, salt and sugar.
- In a measuring cup add the root beer, then the root beer extract and vanilla.
- Alternate between the flour mixture and the root beer mixture into the butter mixture.
- Mix only until combined.
- Using an ice cream scoop fill each cupcake liner ¾ full.
- Bake 18 minutes or until a wooden toothpick inserted into the center comes out clean.
- Cool completely before adding the frosting.

Root Beer Float Cupcakes

Transform your favorite childhood drink into your favorite dessert!
Ingredients
For the Root Beer Cupcakes:
- 1 (15.25 ounce) vanilla cake mix
- 1 (3.4 ounce) vanilla instant pudding mix
- ¾ cup vegetable oil
- 3 large eggs
- 1 cup Root Beer
- 1 dram ounce root beer flavor ( I used LorAnn)
- Optional Toppers :24 root-beer-flavor hard candies paper straws cut to fit
For Vanilla Ice Cream Float Frosting:
- ¾ cup unsalted butter, softened
- ¾ cup vanilla ice cream, softened
- ½ teaspoon vanilla extract
- 5 cups powdered sugar
Instructions
For the Root Beer Float Cupcakes:
- Preheat oven to 350°.
- Line cupcake tin with liners (22).
- In a large mixing bowl add the cake mix, pudding mix, oil, eggs, root beer and root beer flavoring.
- Mix until combined and no lumps are present.
- Fill cupcake liners ¾full.
- Bake 18 minutes or until a wooden toothpick inserted into the center comes out clean.
- Cool completely before adding the frosting.
- Decorate with a root beer flavor hard candy or a cut to fit straw
For the Vanilla Ice Cream Float Frosting:
- In a large mixing bowl cream the butter until light and fluffy (about 3 minutes).
- Add room temperature vanilla ice cream and vanilla, whip together until combined.
- Add powdered sugar, mix on medium high (about 5 minutes), until light, airy and fluffy.
- Pipe or spread onto cooled cupcakes.
