Old Fashioned Danish Aebleskiver Pancakes
Light and fluffy pancakes, made with simple ingredients like flour, buttermilk and eggs. These amazing delights are round in shape and can be made with fresh fruit or plain.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 cups buttermilk
- 3 large eggs, separated
- unsalted butter
- powdered sugar for sprinkling
Instructions
- In a medium bowl, whisk together the flour, salt and baking soda.
- Stir in the buttermilk and egg yolks.
- In a medium mixing bowl, add the egg whites.
- Beat on medium high until soft peaks. Fold into the batter.
- Heat pan with a little butter, vegetable oil or cooking spray in each well. (I like to use butter, it adds a great brown butter flavor).
- Fill each well TWO THIRDS full.
- Cook 1 to 1½ minutes (per side) until golden brown.
- Use toothpicks to flip over.
- Sprinkle with powdered sugar.
- Best when served hot.
Notes
How to Freeze:
Place the pancakes on a cookie sheet lined with parchment paper. Place flat in the freezer. Wait until the pancakes are completely frozen. Transfer to a freezer safe container or zip top bag. EASY! Now you have mini pancakes whenever you need them. Take out only a few at a time or all at once. Will stay fresh in the freezer up to 3 months.
How to Reheat Frozen:
Preheat oven to 275°. Line a cookie sheet with parchment paper. Bake 12 to 15 minutes. Sprinkle with powdered sugar. Serve hot.
