Corn Salad
Corn Salad: A delicious easy to make salad with only a few ingredients. The perfect potluck salad, holiday salad or summer salad. This amazing salad is versatile in that it can be made in the summer with fresh from the field corn on the cob or made in the winter and spring with frozen corn kernels (not frozen corn on the cob). If you’re looking for a NEW salad to bring to the holiday table then this is the salad for you!
How to Make Corn Salad
- INGREDIENTS
- GRILLED OR ROASTED FRESH OR FROZEN CORN
- BELL PEPPER (chopped)
- GREEN ONION (chopped)
- COLBY JACK CHEESE (cut into small bite size squares)
- CHILI CHEESE CORN CHIPS
- DIRECTIONS
- Cut the grilled corn off the cob—if fresh corn on the cob is not available use frozen corn kernels (look above for the instructions on how to roast corn on a stove top).
- Into a large bowl add the corn, bell pepper, cheese, green onion, crushed chili cheese corn chips and mayonnaise.
- Stir to combine, cover and refrigerate.
- Serve with more corn chips on the side.

Corn Salad

Ingredients
For the Salad:
- 5 cups grilled corn on the cob, cut off the cob OR frozen corn kernels (look below for a link on how to roast corn on your stove top)
- 1 cup green bell pepper, chopped (about 1 medium)
- 1 cup colby jack cheese or cheddar cheese, cut into bite size squares
- 2/3 cup green onion tops, chopped
- ½ cup mayonnaise
- OPTIONAL: 1½ cups whole chili cheese corn chips
For the Topping:
- 2 cups chili cheese corn chips, crushed
Instructions
For the Corn Salad:
- In a large bowl, combine the corn, bell pepper, cheese, green onion, mayonnaise and-optional- corn chips.
- Stir to combine.
- Cover and refrigerate until ready to serve.
For the Topping:
- Wait until ready to serve—Unless the salad will be consumed at the meal, it's best to serve the corn chips on the side and let the guests add them to the top of their salad.
- OTHERWISE—sprinkle the crushed chips over the top of the salad and serve.
