HOW TO MAKE CHRISTMAS FRUITCAKE FUDGE
- INGREDIENTS (printable recipe below)
- butter cake or yellow cake mix
- eggs
- vegetable oil
- cinnamon
- nutmeg
- all spice
- fruit cake mix
- brandy flavoring
- white chocolate
- sweetened condensed milk
- butter
- brandy flavor
- fruit cake mix
- pecans
- INSTRUCTIONS—CAKE LAYER
- Preheat oven to 350°
- Line a baking pan with foil and spray with non stick cooking spray
- Mix together the cake mix, eggs, oil, spices and fruit cake mix.
- Press into the bottom of the prepared pan, bake and let cool completely.
- FUDGE LAYER
- In a 4 cup microwave safe bowl, mix together the white chocolate, condensed milk and butter.
- Microwave 1 minute and stir. If chocolate is not melted continue heating in 30 second increments at 60% powder, stirring between each heating until chocolate is creamy.
- Fold in the fruit cake mix, brandy flavoring and pecans until combined.
- Pour over cooled cake layer.
- Use an offset spatula to spread evenly.
- For a quick hardening process cover and place fudge in the refrigerator or let the fudge sit on the counter (covered).

Ingredients
For the Cake Layer:
- 1 (15.25 ounce) butter cake or yellow cake mix
- 2 large eggs
- 1/3 cup vegetable oil
- 1½ teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground all spice
- ½ cup Fruit Cake Mix
For the Fudge Layer:
- 18 ounces white chocolate wafers or chips (I used Ghirardelli wafers)
- 1 (14 ounce) can sweetened condensed milk
- 2 tablespoons unsalted butter, cut into pieces
- 1 teaspoon (1 fl. dram) LorAnn Brandy flavoring
- 1 cup Fruit Cake Mix
- 1 cup pecans, chopped
Instructions
For the Cake Layer:
Preheat oven to 350°. Line a 9x13-inch baking pan with foil and spray with non stick cooking spray.
In a medium bowl stir together the cake mix, eggs, oil, spices and fruit cake mix until combined. Press dough into prepared baking pan. Bake 18 minutes or until the edges are baking and the center is slightly under baked. Set aside to cool (about 25 minutes).
For the Fudge Layer:
In a 4 cup microwave safe bowl, mix white chocolate wafers,, sweetened condensed milk and butter. Stir until combined. Microwave 1 minute. Stir until creamy. If chocolate is not melted, continue heating in 30 second increments at 60% power. Fold in the fruit cake mix, brandy flavoring and pecans until combined. Pour on top of the baked cake layer, use an offset spatula to smooth the fudge. For a quick hardening process cover and place fudge in the refrigerator or let the fudge sit on the counter (covered).
