My Trick for Lining a Pan with Foil
The easiest way to line a pan with foil is by turning the pan upside down with the bottom facing up. Lay the sheet of foil over the bottom and form. Turn pan right side up, place formed foil into the pan and press down to form.

How to Make Apple Butter Cheesecake Bars
- Press crust into bottom of prepared pan. Reserve a portion of the crust mixture for topping. (full printable recipe below)
- Cream together the cream cheese, sugar, whipping cream and eggs.
- Pour into prepared pan, add dollops of apple butter.
- Sprinkle reserved crust on top.

Apple Butter Cheesecake Bars
If making a full size cheesecake gets you a little nervous, try making these delicious Fall inspired cheesecake bars. Just as tasty as a full size cheesecake.
Ingredients
For the Crust:
- 2 cups all purpose flour
- 2 cups old fashioned oats
- 1 cup light brown sugar, firmly packed
- ¾ cup pecans, chopped
- 1½ teaspoons salt
- 1 teaspoon apple pie spice
- ¾ teaspoon baking soda
- 1¼ cups unsalted butter, softened
For the Cheesecake Filling:
- 2 (8 ounce) packages cream cheese, softened
- 2/3 cup granulated sugar
- 2 tablespoons heavy whipping cream
- 1 tablespoon all purpose flour
- 2 large eggs
- 1 (9 ounce ) jar or homemade apple butter
Instructions
For the Crust:
- Preheat oven to 350°.
- Line a 9x13 inch baking pan with foil, letting excess extend over sides of pan; spray foil with cooking spray.
- In a large bowl, whisk together the flour, oats, brown sugar, pecans, salt, pie spice, and baking soda.
- Add butter, and beat with a mixer at medium-low speed until mixture is crumbly, stopping to scrape side of bowl.
- Reserve 1½ cups mixture in a small bowl; press remaining mixture into the bottom of prepared pan.
- Bake until lightly browned (about 15-20 minutes).
- Let cool completely on a wire rack (leave oven on).
For the Cheesecake Filling:
- In a large mixing bowl, beat cream cheese, granulated sugar, cream, and flour on medium speed until smooth and creamy (about 2-3 minutes), stopping to scrape sides of the bowl.
- Add eggs, one at a time, beating until combined after each addition.
- Pour mixture onto prepared crust.
- Dollop apple butter by tablespoonfuls onto cream cheese mixture.
- Sprinkle the reserved oats mixture over apple butter.
- Bake until top is golden brown, 30-35 minutes.
- Let cool completely in pan on a wire rack.
- Loosely cover and refrigerate until firm (1-2 hours).
- Using the excess foil as handles, remove from pan, and cut into bars.
- Cover and refrigerate up to a week.

Hi Sheryl, Found your Apple Cheesecake Bar Recipe today and it really sounds delicious! I’m going to make it today. My first rule is to always make a recipe “original” before making any changes but today I’m going to make an exception. I had already re-hydrated some Cranberries and I believe they will be delicious, sprinkled on top of the filling. Will let you know!
