Copycat Disneyland S’more Rice Krispy Treats: Do you ever find yourself daydreaming about the delicious treats at Disneyland while stuck at home? Well, get ready to bring a piece of the magic into your own kitchen with this copycat recipe for Disneyland’s famous S’more Rice Krispy Treats. Packed with gooey marshmallows, gooey chocolate, and crispy cereal, these treats are a fan favorite for both kids and adults alike. While Disneyland is known for it’s incredible selection of churros, the Disneyland Parks also excel in their Cereal Treat Bars. Thick, chewy, full of marshmallow flavor, and assorted toppings is what you can expect from this delicious rice krispy treat.
How to Make Copycat Disneyland S’more Rice Krispy Treats
These delicious cereal treat bars have SEVEN layers and 100% worth it! If you’ve been to the Disney Parks then you’ve probably seen these impressive treats. The Disney Parks S’mores Cereal Treat Bars have a rice krispies treats base topped with dark chocolate, a graham cracker, more dark chocolate, mini marshmallows, chocolate drizzle, and Mickey Mouse chocolate chips! WOW now that’s a treat! I asked about the Mickey Mouse chocolate chips when I was at Marceline’s Confectionery in Downtown Disney. Apparently if they have them in stock they will sell you some. No such luck for me. So mini chocolate chips it is.
The Disneyland Resort is home to the most delicious treats. My favorite places you can find them is in Downtown Disney, Trolley Treats (California Adventure), and Candy Palace (Main St. USA). Below, are a few Disney recipes I have created over the years.

FOR THE RICE KRISPY TREATS
- crispy rice cereal
- unsalted butter
- mini marshmallows
FOR THE S’MORE TOPPERS
- graham crackers
- dark chocolate wafers
- marshmallows
- mini chocolate chips
DIRECTIONS
FOR THE RICE KRISPY TREATS
- Spray a 8x12x2 inch baking pan with non stick cooking spray.
- Line with pan with parchment paper going 12 inch length, spray paper, add another piece of parchment paper going 8 inch width, and spray again.
- Measure cereal into a bowl, set aside.
- Add marshmallows and butter to a large microwave safe bowl. Microwave on high 1 minute, stir until the butter and marshmallows are melted. If needed heat an additional 30 seconds.
- Pour pre-measured cereal into marshmallow mixture. Stir until the cereal is coated, add additional remaining marshmallows.
- Pour cereal mixture into prepared pan, spray hands with non stick cooking spray and press into prepared pan.
- Refrigerate 30 minutes or until treats are cold.
- Using the parchment paper, pull treats out of the pan.
FOR THE S’MORE TOPPERS
- Break graham crackers in half so that there are two pieces per square. Place graham cracker squares on top of the chilled treats.
- Using a large serrated knife cut into 5 rows of three graham cracker squares.
- Pull one row away from the main part, still using the graham crackers as your guide, cut each row into three squares. Repeat until all the rows have been cut into squares. When finished you should have 15 squares.
- CHOCOLATE: Pour one bag of chocolate wafers into a medium microwave safe bowl. Microwave on high 1 minute. Stir until creamy.
- Remove graham cracker squares from the treats, spoon (about 1 tablespoon) melted chocolate on top of the treats. If needed use the back of the spoon to spread the chocolate.
- Press graham cracker square on top of the treat.
- Pour the remaining bag of chocolate into the same bowl as the previous chocolate bowl. Microwave on high 1 minute. Stir until creamy.
- Add another tablespoon of dark chocolate to the center of the graham cracker, use the back of the spoon to slightly spread the chocolate.
- Add remaining marshmallows to the top of the chocolate, for a little extra height add three or four mini marshmallows on top of the marshmallows.
- Pour remaining chocolate into a squeeze bottle. TIP: If chocolate is too cold, microwave an additional 15 seconds.
- In a back and forth motion add a chocolate drizzle over the top of the marshmallows. While the chocolate is still soft and wet, add a sprinkle of mini chocolate chips.
- Set aside to harden or refrigerate 10 minutes. MAKES 15 TREATS

There’s no denying, Disneyland Resort knows how to make good treats. I guess the best testimony to that is all the copycat recipes out there. It’s fun to be able to create some of the magic you experience in the parks at home. I have seen tons of s’more rice krispy treats recipes. What caught my eye with this one was the addition of a whole graham cracker. Not only did it offer nice graham cracker flavor but It also added crunch to the treat.
Copycat Disneyland S’mores Cereal Treat Bars—Layers
RICE KRISPY TREAT: These soft chewy treats are super easy to make in the microwave. The last addition of marshmallows adds nice fluffy of bits marshmallow to the treat bar.
CHOCOLATE: Since chocolate is as much the star of this s’more treat as the rice krispy treat. I recommend using a good chocolate. I used Ghirardelli dark chocolate wafers.
GRAHAM CRACKER: Believe it or not I think the graham cracker is just as much the star of the show as the rice krispy treat. Gently break each graham crack in half using the dotted line as a guide.
CHOCOLATE: Another dollop of delicious chocolate. This will serve as the glue for the marshmallow topping.
MARSHMALLOWS: To drive home the marshmallow flavor, a tower of mini marshmallows are place on top of the chocolate.
CHOCOLATE DRIZZLE: One more layer of chocolate. The melted chocolate can be poured into a small zip top bag, snip the corner, and in a back and forth motion drizzled over the marshmallows. TIP: FOR A FINE DRIZZLE I RECOMMEND USING A SQUEEZE BOTTLE. You can find affordable squeeze bottles at Walmart in the cake decorating section not the baking isle.
CHOCOLATE CHIPS: Another layer of chocolate and crunch!
CAN I MAKE THE RICE KRISPY TREATS THE TRADITIONAL WAY?
SURE! Place butter in a Dutch oven or pot. On medium heat, stir to melt. Add the marshmallows to the pot. Stir together until melted and smooth. Take off the heat, stir in the cereal until combined, stir in the remaining mini marshmallows. Press into prepared baking dish.
CAN I USE MARSHMALLOW FLUFF INSTEAD OF MINI MARSHMALLOWS?
Yes, you can use marshmallow fluff to make rice krispy treats. If you choose to use marshmallow fluff instead of mini marshmallows you’ll need to adjust the recipe a bit. Melted marshmallow to marshmallow fluff ratio is a little different. For the best results, I recommend using 1 (13 ounce) jar of marshmallow fluff to 8 cups of cereal and 4 tablespoons of butter.
CAN I FREEZE RICE KRISPY TREATS?
I wouldn’t recommend freezing the treats. For best results enjoy within 7 days.
HOW TO STORE LEFTOVER COPYCAT DISNEYLAND S’MORE RICE KRIPSY TREATS
Store any leftovers in an airtight container at room temperature. I don’t think you’ll have to worry about how long they will stay fresh (because they’re going to be gone fast) so….just for information purposes, if stored correctly, the treats will stay fresh up to a week.

- 1 cup mini marshmallows
For the S'more Rice Krispy Treats:
- 7½ graham cracker sheets
- 2 (10 ounce) bags Ghirardelli dark chocolate wafers
- 2½ cups mini marshmallows
- 1/3 cup mini chocolate chips
Instructions
For the Rice Krispy Treats:

- In a back and forth motion add a chocolate drizzle over the top of the marshmallows. While the chocolate is still soft and wet, add a sprinkle of mini chocolate chips.
- Set aside to harden or refrigerate 10 minutes. MAKES 15 TREATS
