How to Make Apple Crunch Coffee Cake Muffins
INGREDIENTS
- all purpose flour
- brown sugar
- salt
- butter
- granulated sugar
- baking powder
- baking soda
- buttermilk or sour milk
- egg
- vanilla
- chopped fresh apple
INSTRUCTIONS
- FOR THE STREUSEL: Stir together, flour, brown sugar, salt, and melted butter. Set aside.
- In a large bowl, stir together flour, granulated sugar, baking powder, baking soda, and salt.
- In a medium bowl, whisk together buttermilk, melted butter, egg, and vanilla.
- Add egg mixture to the flour mixture all at once.
- Stir just until moistened. Stir in apple.
- Fill muffin cups, bake 18-20 minutes.
- FOR THE CINNAMON DRIZZLE: Whisk together powdered sugar, milk, ground cinnamon, and vanilla.

NUT STREUSEL: • ½ cup all-purpose flour • ¼ cup packed light brown sugar •½ cup chopped nuts • 1 teaspoon ground cinnamon •½ teaspoon almond extract • 2 tablespoons butter, cubed

- PIE FILLING: Instead of fresh apple pieces, use pie filling! Now you’ve transformed your muffins into cherry pie, blueberry pie, or apple pie muffins. Remember to only use 1 CUP.
- CINNAMON BAKING CHIPS: Along with the diced apple, add ½ cup of baking chips to the muffin dough.
- NUTS: Along with the diced apples, add ½ to ¾ cup of chopped nuts (walnuts or pecans).
- DRIED FRUIT: Any dried fruit will work (chopped apricots, cranberries, raisins, dates etc.). Only add 1 CUP.

Ingredients
For the Apple Muffins:
- 1¾ cups all-purpose flour
- ¾ cup granulated sugar
- ¾ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup melted unsalted butter
- ¾ cup buttermilk or sour milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 medium apple (equals 1 cup), cored, chopped into ½-inch pieces
For the Streusel:
- 1/3 cup all-purpose flour
- 3 tablespoons packed light brown sugar
- 1/8 teaspoon salt
- 2 tablespoons melted unsalted butter
For the Cinnamon Drizzle:
- 1 cup powdered sugar
- 1 tablespoon milk
- ¼ teaspoon ground cinnamon
- ¼ teaspoon vanilla extract
Instructions
For the Apple Muffins:
- Preheat oven to 350°.
- Line 12-regular size muffin cups with paper bake cups.
- In a large bowl stir together the flour, sugar, baking powder, baking soda, and salt. set aside.
- In a medium bowl whisk together the buttermilk, butter, egg, and vanilla.
- Add egg mixture all at once to the flour mixture.
- Stir just until combined (batter should be lumpy). Stir in apple pieces.
- Fill prepared muffin cups using ¼ cup batter.
- Sprinkle each with 1 tablespoon of streusel.
- Bake until toothpick comes out clean, 18-20 minutes. Cool in muffin cups on a wire rack 5 minutes. Transfer muffins out of the muffin cups to a wire rack.
- Spoon cinnamon drizzle evenly over muffins.
- Serve warm or at room temperature. MAKES 12 MUFFINS
For the Streusel:
- In a small bowl stir together the flour, brown sugar, and salt.
- Add butter, toss with a fork to combine.
For the Cinnamon Drizzle:
- In a small bowl stir together the sugar, milk, cinnamon, and vanilla.
- If needed, stir in additional milk, 1 teaspoon at a time, to reach drizzling consistency.
How to Store Apple Crunch Coffee Cake Muffins:
Place cooled muffins in a single layer in an airtight container. Store in refrigerator up to 3 days or freeze up to 3 months. NOTE: IF FREEZING: Wait to add the cinnamon drizzle.
