How to Make Street Corn Dip In The Oven
In a 9 x 13-inch baking dish, add the cream cheese (torn into chunks), sour cream, pepper jack cheese (broken into chunks), Southwest corn, cilantro, and Tajin. Stir together. Baking uncovered in a 350° oven 30 minutes stirring at the 15 minute mark. To make it pretty add a sprinkle of chopped cilantro, Tajin, and (if desired) Cotija cheese.
How to Make Street Corn Dip In The Slow Cooker
In a slow cooker set on low, add the cream cheese (torn into chunks), sour cream, pepper jack cheese (broken into chunks), Southwest corn, cilantro, and Tajin. Stir together. Cook 2 hours stirring at the 1 hour mark. To make it pretty add a sprinkle of chopped cilantro, Tajin, and (if desired) Cotija cheese.
How to Make Street Corn Dip In The Smoker
In a 9×13-inch foil pan, add the cream cheese (torn into chunks), sour cream, pepper jack cheese (broken into chunks), Southwest corn, cilantro, and Tajin. Stir together. Smoke uncovered in a 225° smoker 2 hours stirring at the 1 hour mark. To make it pretty add a sprinkle of chopped cilantro, Tajin, and (if desired) Cotija cheese.

This party favorite dip is very versatile and can accommodate a lot of different ingredients. Taking this dip to a different level of heat and flavor. Make the base recipe several times and create many different dips!
- FRESH JALAPENO PEPPERS: Chop fresh jalapeno peppers with the seeds and veins for a hot spicy party dip. Take out the seeds and veins for a milder dip.
- BLACK BEANS: Drain a can of black beans, pour into the dip with the other ingredients. This not only adds another layer of flavor but texture too.
- VEGETABLES: Add sautéed onions, a can of green chiles. Swap the Southern corn for grilled corn on the cob.

Street Corn Dip
This Mexican Street Corn Dip incorporates all the flavors of street corn and transforms them into the creamiest dip.
Ingredients
For the Dip:
- 2 (8 ounce) blocks cream cheese, torn into chunks
- 2 (15.25 ounce) cans Southwest Corn, drained
- 1 (8 ounce) container sour cream
- 1 (1 pound) block pepper jack cheese, broken into chunks
- ½ cup cilantro, chopped
- 1½ tablespoons Tajin
For the Topping:
- Sprinkle of chopped cilantro, Cotija cheese, and Tajin
Instructions
For the Oven:
- Preheat oven to 350°. Spray a 9x13 inch baking dish with non stick cooking spray.
- Break up cream cheese and jack cheese into large chunks.
- Add dollops of sour cream over cheeses.
- Stir in corn, cilantro, and Tajin.
- Bake 30 to 35 minutes or until cheeses are melted (do not cover). Mix half way through.
For the Slow Cooker:
- Spray slow cooker with non stick cooking spray.
- Break up cream cheese and jack cheese into large chunks.
- Add dollops of sour cream over cheeses.
- Stir in corn, cilantro, and Tajin.
- Cook on low 2 hours or until cheeses are melted. Mix half way through.
For the Smoker:
- Spray a 9x13 inch foil pan with non stick cooking spray.
- Break up cream cheese and jack cheese into large chunks.
- Add dollops of sour cream over cheeses.
- Stir in corn, cilantro, and Tajin.
- Smoke at 225° for two hours (do not cover) or until cheeses are melted. Mix half way through.
