Now before you go all crazy on me listen to what I have to say about buttermilk. Remember how much you love buttermilk ranch dressing or buttermilk pancakes? That’s what I’m talking about. Buttermilk mixed into recipes is delicious! My Mom loved buttermilk. She would drink glasses of it! I on the other hand would never and I mean never drink buttermilk straight out of the carton or any other way. But blend that same buttermilk with mustard, mayonnaise, and a splash of pickle juice and you’ll have a delicious potato salad dressing.

- 1 (5 ounce) bag russet potatoes, peeled and diced
- 1 tablespoon salt
- 1 cup crunchy celery, chopped
- ¾ cup green onions, chopped
- ½ cup dill pickles, chopped
- 4 large hard-boiled eggs, sliced
- 1 (6 ounce) can black olives, coarsely sliced
POTATO SALAD DRESSING INSTRUCTIONS
- In a medium container, whisk together the mustard, mayonnaise, buttermilk, pickle juice, salt, and pepper until combined and creamy.
- Set aside.

- Place peeled and chopped potatoes in a large pot, cover with cold water, and add 1 tablespoon of salt.
