Microwave Peanut Brittle
Microwave Peanut Brittle | This brittle tastes exactly like old fashioned peanut brittle. No candy thermometer…. and is ready to pour in less then 10 minutes! Satisfy your Peanut Brittle craving in just minutes! Perfect for a quick gift or to add to your Christmas goodie tray.
I made two batches. One in a Pyrex 4 cup measuring cup and one in a Pyrex bowl. Both the recipes turned out the same. So if you don’t have a 4 cup measuring cup a microwave safe bowl will work too! Add any leftover brittle to recipes! It adds a little crunch not to mention another layer of flavor. Like my Peanut Brittle Cookies, Chewy Peanut Brittle Brownies or Peanut Brittle Popcorn Nuggets. Game day just got a lot sweeter with these recipes!
Microwave Peanut Brittle
Ingredients
- 1 cup granulated sugar
- ½ cup light corn syrup
- 1 cup raw Spanish peanuts
- 1 tablespoon unsalted butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
Instructions
- In a glass measuring cup (at lease 4 cups) or microwave safe bowl, combine sugar and corn syrup.
TIP: Make sure the two sugars are well combined BEFORE cooking.
- Cook on high 3 minutes 30 seconds.
- Stir, add peanuts and cook 3 minutes.
- Add butter and vanilla; cook 1 minute 30 seconds.
- Quickly fold in baking soda.
- Quickly spread on a greased or parchment paper lined cookie sheet to cool.
- Break into pieces.

Made this many times. Looking for a way to double the recipe and have heard it doesn’t work. In fact, on a couple of occasions this basic recipe yielded a toffee consistency (because it didn’t get hot enough). I make with sunflower and pepita seeds. Astro loves you.
Thanks! It was a game changer when I found out I could make this delicious candy in the microwave! It’s my dad’s favorite. I love taking him a big bag of it when I go to visit him. I take him a double recipe but I make the recipe twice. I don’t think the mixture would get hot enough to reach a hard crack stage with a double batch in one container.
Peanut Brittle is my signature Christmas candy. All my Brittle loving friends & relatives expect it. After years of slaving over a pot waiting for a thread to spin I started using this microwave method. You can’t tell the difference. Every microwave cooks differently so watch the first two nukes very closely. 4 minutes is too long in my microwave but 3 1/2 minutes is perfect. Even with washing the measuring cup during batches I can make 3 batches in less time than it took me to make one on the range.

Hi Betty, check to see the wattage of your microwave. You may have to cook it longer.
I’ve been making brittle in the microwave for years, but somehow misplaced my recipe. Yours is exactly the same.. except a pinch of salt.
I bought WAAAY to many peanuts before the holidays, so I’m still whipping up batches. Think I’ll try sprinkling a little kosher salt on one… and melt chocolate chips over another. Mmmmmm!!! #brittlefordays

Hi Middy, You can use any type of peanut. I have always used the Spanish peanuts with no added salt of flavor.
