- 24 uncooked jumbo pasta shells
- 1 pound lean ground beef
- 2 cups your favorite salsa
- 1 (8 ounce) can tomato sauce
- 1 cup fresh or frozen corn kernels
- ½ cup black beans, rinsed and drained
- 1 cup shredded reduced-fat Mexican cheese blend or cheddar cheese
GROUND BEEF FILLED SHELLS INSTRUCTIONS
- Cook pasta shells according to package directions; drain.
- In a large skillet, cook beef over medium heat unto no long pink; drain.
- Preheat oven to 350°.
- Stir in the salsa, tomato sauce, corn, and beans. Carefully spoon into cooked shells.
- Place in a 9×13-inch baking dish coated with non stick cooking spray.
- Sprinkle cheese over the top of the shells.
- Cover with foil and bake 25-30 minutes or until heated through.
- Top with toppings: 1 tablespoon each of sour cream, salsa, and 1½ teaspoons each black olives and green onion. About 323 calories per serving (three stuffed shells).
