Dark Chocolate Eggnog Truffle Filled Turkeys: This fun Thanksgiving chocolate treat is lined with dark chocolate and has the most amazing eggnog truffle filling! If you are a fan of truffles than you are going to love these fun Thanksgiving Day Chocolate Turkeys.

How to Make Dark Chocolate Eggnog Truffle Filled Turkeys
- INGREDIENTS FOR THE CHOCOLATE TURKEYS (makes 8-10 turkeys—full printable recipe below)
- 1 (10 ounce) bag of dark chocolate (I used Ghirardelli)
- turkey mold 3⅝” x 4″ x 2½”
- INGREDIENTS FOR THE EGGNOG TRUFFLE FILLING
- 2 (4 ounce) white chocolate bars (I used Ghirardelli)
- unsalted butter
- ground nutmeg
- ground cinnamon
- cream cheese
- DIRECTIONS
- Melt dark chocolate wafers. Pour into the turkey mold, using a clean small paint brush, spread the chocolate to the top of the mold, turn upside down and shake the chocolate into a dish to catch the extra chocolate.
- Place the mold in the refrigerator.
- While the mold is hardening make the Eggnog Truffle Recipe. Put into a piping bag fitted with a wide opening ( I used tip #12).
- Fill the cavity with the eggnog truffle filling. Be careful, don’t fill to the top.
- Re-heat chocolate and fill the mold to the top.
- Place back into the refrigerator to harden. When hardened turn over and pop out chocolate turkey.

What Chocolate Should I Use to Cover the Chocolate Turkeys?
- CAN I USE CHOCOLATE CHIPS INSTEAD OF MELTING CHOCOLATE? I don’t recommend using chocolate chips in place of melting wafers. HERE’S WHY—Chocolate chips are formulated to hold their shape in high heat. This is the reason when you bake chocolate chip cookies in the oven at 350° they keep their chip shape. Because of their resistance to high temperatures people tend to over heat them.
- CHOCOLATE MELTING WAFERS: Number one for flavor and melting is Ghirardelli melting wafers. Ghirardelli offers milk chocolate, dark chocolate, and white vanilla. Not only do these flavors taste good but the product melts beautifully. It’s not necessary to any helping agent like vegetable shortening.
The Best Chocolate for Truffles
Use pure chocolate, the kind sold in 4 ounce bars (found on the baking isle). Do not use chocolate chips. The higher the quality chocolate you use the better your truffles will taste. My favorite is Ghirardelli. If you want to splurge (and if you can find it), Scharffen Berger chocolate is incredible!
How to Freeze Dark Chocolate Eggnog Truffle Filled Turkeys
Store truffles between layers of wax paper in an airtight container in the refrigerator up to 1 week. For longer storage—layer truffles between layers of wax paper in an airtight container— freeze up to 3 months. Thaw in the refrigerator, then bring to room temperature.

Dark Chocolate Eggnog Truffle Filled Turkeys
A hard dark chocolate shell encased around a delicious cream eggnog filling. The perfect holiday treat!
Ingredients
For the Chocolate Turkeys:
- 1 (10 ounce) bag dark chocolate wafers (I used Ghirardelli)
- 3-d turkey candy mold 3⅝” x 4″ x 2½”
For the Eggnog Truffle Filling:
- 2 (4 ounce) white chocolate bars, chopped (I used Ghirardelli)
- 3 tablespoons unsalted butter
- ¼ teaspoon ground nutmeg
- ¼ teaspoons ground cinnamon
- 1 (8 ounce) cream cheese, softened
Instructions
For the Dark Chocolate Coating:
- Add wafers to a medium microwave safe bowl. Melt on high power 1 minute.
- Stir until creamy. If the chocolate is not completely melted, heat in 30 second intervals at 60% power.
- Pour some melted chocolate into the turkey mold, using a clean small paint brush, spread the chocolate to the top of the mold, or roll the melted chocolate around the mold.
- Turn upside down and shake the chocolate into a dish to catch the extra
chocolate. Place the mold in the refrigerator. While the chocolate is hardening, make the filling.
For the Eggnog Truffle Filling:
- In a large bowl, combine chopped white chocolate and butter.
- Microwave on high in 30-second intervals, stirring between each, until melted and smooth, (about 1-1/2 minutes total).
- Stir in nutmeg and cinnamon.
- In a large bowl, beat cream cheese until creamy. Beat in white chocolate mixture until smooth.
- Transfer filling to a piping bag fitted with a tip that has a wide opening (I used tip #12).
- Fill the cavity with the eggnog truffle filling. Be careful, don’t fill to the top.
- Re-heat chocolate and fill the mold to the top.
- Place back into the refrigerator to harden. When hardened turn over and pop out chocolate turkey.
