Almond Cherry Mini Cone Cupcakes
These cute little Almond Cherry Mini Cone Cupcakes are just what your 4th of July Party dessert table needs! The red, white and blue colors create a fun patriotic treat! The perfect size for little ones and bite size for us bigger kids. Everyone will the love the cherry almond flavor.

Almond Cherry Mini Cone Cupcakes
Ingredients
For the Cupcakes:
- 1 boxed cake mix-plus ingredients to make cake
- 1 teaspoon almond extract
- 1/2 cup cherry flavored chips, chopped
- 3 tablespoons blue sprinkles
- 36 JOY mini cones
For the Almond Frosting:
- 3/4 cup butter, softened
- 1 teaspoon almond extract
- 2 pounds confectioners' sugar
- 6 tablespoons water
- red gel food coloring
- blue gel food coloring
- 3 disposable piping bags
- 3 #12 piping tips
Instructions
For the Cupcakes:
Preheat oven to 350°. Place the mini cones in the cups of a mini muffin pan. Follow the directions on the cake mix box. Add the almond extract, cherry chips and sprinkles. Fill a zip top bag with the batter. Cut the tip large enough for the chopped cherry chips and sprinkles to pass through. Pipe batter into the cones. Fill 3/4 full. Bake 15 minutes. Let cool completely in the mini muffin pan.
For Almond Frosting:
In a large mixing bowl beat butter until fluffy. Add the almond extract and beat until combined. Add 1 cup of confectioners' sugar and beat until well combined. Add the remaining sugar and water. Alternate with the sugar and water. Separate frosting into 3 bowls. Add the red food coloring to one bowl. (enough to get the color you want) Add the blue food coloring to another bowl. (enough to get the color you want) Fill each piping bag fitted with the #12 tip with the three different colors of frosting. Pipe a circle around the outer edge with either red or blue. Add another circle with white. Top the cupcake with either red or blue.

My area Pittsburgh doesn’t seem to stock mini cones anymore. Have any ideas where to get them. Dont want to make them.

These are adorable! Does anyone have any suggestions for how I might transport these? Most mini cupcake carrying containers are too short.
Hi Sera, use a shallow box or lid to a box and make holes big enough for the cones to sit in making sure to keep the holes smaller then the larger end of the ice cream cone.
