Chilaquiles
When visiting my family in Southern California {and by southern I mean only a few miles from the Mexican border} I discovered Chilaquiles. The first time I tried them my husband ordered it for breakfast and they were served with two fried eggs on top.
What is Chilaquiles you ask? While they don’t look like it I think they taste just like cheese enchiladas. I prefer to describe them as a NEW way of making nachos. Either way you are going to love these. I plan on serving it to my hungry game watchers. The only draw back is I recommend using a fork. Unlike nachos these do get messy but it’s completely worth it.

Chilaquiles
Ingredients
- 1/4 cup vegetable oil
- 8 small corn tortillas
- 1 cup mild enchilada sauce
- 2 ounces whole green chilies
- 1 to 1-1/2 cups Mexican cheese blend, shredded
Instructions
- Pour oil into a medium skillet.
- Heat oil on medium high heat.
- Cut tortillas into 4 wedges (like tortillas chips)
- In a small saucepan heat the enchilada sauce and chilies.
- Once oil is hot enough to fry the tortillas, add 5 pieces at a time.
- Fry only a few seconds on each side. (like when frying a tortilla for tacos)
- Place on a plate lined with paper towels.
- Do this in several batches, adding a new paper towel to soak up any extra oil.
- Place fried tortilla pieces into a bowl, add some of the enchilada sauce. (enough to coat the tortilla pieces)
- Add one layer of the coated tortilla pieces to a plate, sprinkle with some of the shredded cheese, repeat until all the tortilla pieces are layered, finish with cheese.
- Drizzle over the top of the tortilla pieces with the remaining enchilada sauce.
- Melt the cheese in the microwave. (about 1 minute)
- TIP: You can choose to treat this dish like enchiladas and add sour cream, cilantro and sliced green onions.

Oooh! These look so good!! You can NEVER go wrong with Mexican. I think I’m going to give them a try and maybe add some canned black beans OR maybe refried black beans in taco seasoning for an extra kick! Thanks for the posting ♥
Thank you for posting this recipe. I am making it as I type this. 😉 I used to live in Chula Vista in San Diego where I could easily find a place that made these. My luck is not as good in Northern CA and I’ve been craving this!

I made this early in the day I also made them all in one pan and left the cheese out until I warm it up in the microwave when my kids get home from school…I love this…
