Orange Chocolate Chunk Cupcakes

The secret? These wonderful orange chocolate chunk cupcakes are filled with big chunks of orange flavored chocolate.

Ingredients
For the Cupcakes:
- 1 yellow cake mix {plus the ingredients listed on the box}
- 1 tablespoon orange zest
- 2 teaspoon orange extract
- 1 - 5.3 ounce bag of milk chocolate orange pieces, coarsely chopped
For the Orange Frosting:
- 1 cup shortening
- 1 teaspoon orange extract
- 1 teaspoon vanilla extract
- 4 cups confectioners' sugar
- 4 tablespoons milk
- optional: get food coloring and pearls
Instructions
For the Cupcakes:
- Preheat oven to 350 degrees.
- Line muffin pan with 24 cupcake liners.
- Mix according to the directions on the box.
- Add the orange zest and orange extract.
- Mix until combined.
- Stir in chopped chocolate.
- Use an ice cream scoop to get even cupcakes and prevent a messy pan.
- Bake 15 to 20 minutes or until a tooth pick inserted into the center comes out clean.
- Let cool on wire cooking rack.
For the Orange Frosting:
- Cream together the shortening, orange extract and vanilla extract.
- Add sugar 1 cup at a time.
- Add enough milk to get a spreading or piping texture 1 tablespoon at a time.
- Optional: Add gel food coloring and decorate. Equally divide frosting and add matching gel food color.
