How to Make Vanilla Cupcakes
- INGREDIENTS
- This recipe makes 12 cupcakes with simple ingredients, butter, sugar, eggs, vanilla, flour, baking powder, and whipping cream. The combination of softened butter and heavy cream creates an amazingly soft cupcake crumb that melts in your mouth.
- DIRECTIONS
- Line 12 muffin cups with cupcake liners.
- Preheat oven to 350 degrees.
- Beat butter until creamy.
- Add sugar and continue beating until combined.
- Add eggs and vanilla, also until combined.
- In a medium bowl add the flour, baking powder and salt.
- Mix the 1/2 teaspoon of vanilla with the whipping cream.
- Alternately add flour mixture and whipping to butter mixture, beating on low speed after each addition just until combined. {batter will be thick}
- Spoon batter into prepared muffin cups, filling each about three-fourths full.
- Smooth the batter,.
- Bake 20 minutes or until a toothpick inserted into the center comes out clean.
- Cool in muffin cups 10 minutes.
- Take out of muffin cups and cool completely on a wire cooling rack.
Tips for the Best Vanilla Cupcakes:
- Room Temperature Ingredients: eggs, heavy cream and butter must be at room temperature to keep your batter an even consistency.
- Alternate Adding the Flour and Heavy Cream: this keeps the mixture uniform and well blended. If you add in all of the flour or heavy cream at once, it can saturate the creamed butter and cause the mixture to separate. Mix well between each addition.
- Measure Correctly: be sure to use the proper measuring cups for wet and dry ingredients.
- Don’t Overfill: Fill cupcake liners 2/3 full or they will overflow and cause a muffin top. If you divide evenly between 12 cupcakes, you should have exactly enough batter. A trigger release Ice Cream Scoop makes portioning easier.

- Beat until smooth.
- Add the confectioners sugar 1 cup at a time until the frosting reaches spreading or pipping consistency.
Tips for Making the Best Caramel Butter Frosting
- Use good butter (full fat) NO MARGARINE.
- Use Vanilla Extract, NOT imitation vanilla.
- Use good caramel ice cream topping.
- Add the sugar 1 cup at a time.
- Whip on high at least 3 minutes.

- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 large egg
- 2 large egg yolks
- 1½ teaspoons vanilla extract
- 1½ cups all-purpose flour
- 1½ teaspoons baking powder
- ¼ teaspoon salt
- ½ cup whipping cream
For the Caramel Butter Frosting:
- ½ cup unsalted butter, softened
- ½ teaspoon vanilla extract
- ¼ cup plus 2 tablespoons caramel ice cream topping
- 2 to 3 cups powdered sugar
For the Toppings:
- 3 (1 ounce) boxes Cracker Jacks
- ½ (3.1 ounce) box Sno Caps Chocolate Candy
