Tropical Mango Gooey Butter Cake: A cake that is dripping with tropical flavors. Like mango, pineapple, coconut and macadamia nuts.
Break out the muumuu dress and lei while you sit back and enjoy the island breeze with this easy to make tropical cake. First, I started with a Tropical Mango cake mix from Pillsbury then added all my favorite tropical ingredients. The perfect dessert to serve poolside or at any tropical theme party. Like a luau!
The crust is made from the cake mix, butter, coconut and macadamia nuts. It has a cookie texture. The filling is cream cheese, butter and pineapple. What better way to celebrate spring/summer than with a tropical dessert!

Tropical Mango Gooey Butter Cake
Ingredients
For the Cake:
- Pillsbury tropical mango cake mix
- 1 egg
- 1 cup butter, melted
- 1/2 cup coconut flakes
- 1/2 cup macadamia nuts, chopped
For the Filling:
- 1 - 8 ounce package cream cheese, softened
- 2 eggs
- 1 teaspoon coconut extract
- 1 cup butter, melted
- 1 (16 ounce) box confectioners' sugar
- 1 (8 ounce) crushed pineapple, drained
Instructions
For the Cake:
- Preheat oven to 350 degrees.
- Spray a 9x13-inch baking dish with non stick cooking spray.
- Combine the cake mix, egg, butter and mix well with an electric mixer.
- Fold in the coconut and nuts.
- Pat the mixture into the bottom of the prepared dish.
For the Filling:
- In a large bowl, beat the cream cheese until smooth.
- Add the eggs, coconut extract and butter; beat together.
- Add the confectioners' sugar and mix well.
- Fold in pineapple.
- Spread over cake batter and bake for 40 to 45 minutes.
- Make sure not to overbake as the center should be a little gooey.
- Cool on wire rack before cutting into squares.
