When we think of salsa our minds always go to the typical chips and salsa. How about thinking outside the box and adding this easy to make salsa as a topping on grilled meat. For a quick and easy Spanish Rice stir some of this salsa in to cooked rice.
If you’re not a fan of fresh tomatoes you can switch them out for chopped roasted red peppers. The peppers will add some smokiness to the salsa.

Ingredients
- 1 (15.25 ounce) can whole kernel corn, drained
- 1 cup salsa verde
- 1 medium fresh tomatoe, chopped and seeds removed
Instructions
Combine corn, salsa verde and tomato. Store in an air tight container. Chill until ready to serve.
