Spicy Asian Bourbon Chicken Dinner Recipe
Ingredients
For the Chicken
- 2 tablespoons vegetable oil
- 2 pounds boneless, skinless chicken breasts, cubed into 1-inch pieces
For the Spicy Bourbon Sauce
- 1 cup water
- 1 cup light brown sugar, packed
- 1/4 cup apple cider vinegar
- 2/3 cup soy sauce
- 1/4 cup bourbon
- 3 cloves, garlic, minced
- 1 tablespoon chopped ginger
- 1 teaspoon chili paste
For the Slurry
- 1/4 cup apple juice
- 2 tablespoons cornstarch
Instructions
In a large skillet heat oil; add chicken and cook until brown. Remove chicken from skillet into a bowl. In the same skillet add the water, sugar, vinegar, soy sauce, bourbon, garlic, ginger and chili paste. Whisk together, scraping up the brown bits from the chicken. Add the chicken back into the skillet with the sauce. Bring the mixture to a boil, reduce heat and simmer for 20 to 25 minutes. In a small jar add the cornstarch and apple juice. shake to mix. Pour over chicken and sauce. Boil until thick. Serve with rice.
