Apple Nut Cake with Hot Rum Sauce
Ingredients
For the Apple Nut Cake:
- 1/2 cup butter, softened
- 2 cups sugar
- 2 eggs
- 2 tablespoons water
- 2 teaspoons vanilla extract
- 1/2 teaspoon butter flavoring
- 2 cups all-purpose flour
- 2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 5 apples (granny Smith), Peeled and finely chopped
- 1 cup pecans, chopped
For the Hot Rum Sauce:
- 1 cup sugar
- 1 cup water
- 1/2 cup butter
- 2 tablespoons all-purpose flour
- 1/8 teaspoon salt
- 2 teaspoons rum or rum extract
- 1 teaspoon vanilla extract
- 1/4 teaspoon butter flavoring
Instructions
For the Apple Nut Cake:
- Preheat oven to 350 degrees.
- Grease and flour a 9x13-inch baking pan.
- Mix butter until creamy, add sugar, beat well.
- Add eggs one at a time.
- Add water and flavorings, beating well.
- In separate bowl combine flour, baking soda, salt and cinnamon.
- Add to the butter mixture, beating well.
- Stir in apples and pecans.
- Spoon mixture into prepared pan and spread evenly.
- Bake 55 to 60 minutes.
- Serve warm with warm sauce.
For the Hot Rum Sauce:
- Combine in a medium saucepan sugar, water, butter, flour and salt.
- Bring mixture to a boil stirring constantly.
- Stir in flavorings, and return to a boil stirring constantly. Makes 2-1/3 cups.
