Apple Pie Parfaits
Ingredients
For the Parfaits
- 1 recipe apple pie filling (below)
- 2 (32 ounce) vanilla yogurt containers
- 1 (11 ounce) bag granola
For the Apple Pie Filling
- 6 large Granny Smith apples, peeled, cored and chopped
- 1 1/2 cups light brown sugar
- 3/4 cup granulated sugar
- 3 teaspoons ground cinnamon
- 6 tablespoons all-purpose flour
- 1 teaspoon salt
- 6 tablespoons unsalted butter
- 1/3 cup water
Instructions
For the Parfaits:
In the bottom of a 8 ounce cup add 1/3 cup yogurt. On top of the yogurt pour 1/4 cup apple pie filling. Then add 1/8 a cup of granola.
- Bottom: Vanilla Yogurt
- Middle: Apple Pie Filling
- Top: Granola
For the Apple Pie Filling:
In a large saucepan add the apples, sugars, flour, cinnamon, salt, butter and water. Stir to combine. On med high heat cook until butter is melted. Turn heat down to medium low and simmer 3-5 minutes or until the sauce has thickened and apples are tender but still crisp. Transfer to a large bowl, cover and refrigerate until completely cold.
