Banana Nut Bread
I have been making this recipe for over 25 years. Of all the quick breads I make this Banana Nut Bread is the most requested. When I make this bread I always make at least two. One for us to eat and one for the freezer.
Banana Nut Bread is great to give as a gift or serve at a brunch. Make in mini loaf or muffin size for an Easter Brunch.
If you double this recipe you can make:
2 full size loaves, 29 muffins, 18 mini loaves, 7 dozen mini muffins.

Banana Nut Bread
Always keep an extra in the freezer.
Ingredients
- 1 cup mashed bananas (2 -3 bananas)
- 1/3 cup shortening
- 2/3 cup granulated sugar
- 2 eggs
- 2 tablespoons milk
- 1-3/4 cups all-purpose flour
- 1-1/4 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup walnuts, chopped
Instructions
- Preheat oven to 350 degrees.
- Spray a 9x5 loaf pan with non stick cooking spray.
- Cream together the bananas, shortening and sugar.
- Add eggs and milk.
- Mix until well combined.
- Add the flour, baking powder, salt, baking soda, and nuts.
- Mix until well blended.
- Pour into prepared loaf pan.
- Bake 50 to 55 minutes or until a toothpick inserted into the center comes out clean.
- Cool in pan 10 minutes on cooling rack.
- Take out of pan and cool completely before slicing.

Hi Bonnie, I hate to admit it’s not a cutting board it’s the top of a TV tray I use as a prop. 🙂
