Chocolate Covered Candied Orange Peel
- After the candied orange peel has dried
- Add melting chocolate to a microwave safe bowl ( I use Ghirardelli chocolate wafers), Heat on high 1 minute, stir until melted and creamy. If chocolate is not melted continue heating in 30 second increments at 60% power.
- Dip dried orange peel into the melted chocolate, place on a flat surface lined with parchment paper, (I like using a cookie sheet) if the room is warm, put in the refrigerator to harden or if not…the kitchen counter works too.

Candied Orange Peel
Yield:
Makes 13 ounces (depending on the size of your oranges)

Ingredients
- 4 medium oranges
- 4 cups granulated sugar, divided
- 3 cups water
Instructions
Preparing the Orange Peels:
- Cut each orange into 4 vertical segments, use your thumb to separate the peel form the orange.
- Remove peel including the pith.
- Use a spoon to scrape away the remaining pith. NOTE: THIS IS THE MOST IMPORTANT STEP.
- Cut into strips.
- Place orange strips in a pot of boiling water, boil 15 minutes.
- Drain, rinse, drain again.
Making Candied Orange Peel:
- In the same pot, bring 3 cups water and 3 cups of sugar to a boil, stirring until sugar is dissolved.
- Add orange peel—return to a boil.
- Simmer until peel is very soft (about 40-45 minutes), drain.
- Toss in remaining 1 cup sugar, separate on a cookie sheet lined with parchment paper and dry (about 24 hours).
- Use immediately or Store in an air tight container up to a month in the refrigerator or in the freezer up to 3 months.
I used to try with pomelon. we could try them with hot tea for better taste!

Hi Kenna, Sure you can use Mandarin oranges. I would recommend (since the peels are a lot thinner) reducing the boiling time to 30-35 minutes or until the peels are translucent and soft.
