Caramel Peanut Fudge
Caramel Peanut Fudge | This fudge is my nod to my favorite Payday candy bar. I replaced the sweetened condensed milk with a whole can of Dulce de Leche. Yep, now you get it. It’s full of caramel flavor with lots of salty peanuts mixed inside and sprinkled on top.
I’m sure you’ve noticed by now that I have a slight obsession with fudge. I think it’s fun to take basically the same recipe and create delicious new flavors. I love adding fudge to the Christmas trays of goodies I make for friends.
Caramel Peanut Fudge
Ingredients
For the Fudge:
- 3 cups white chocolate chips
- 1-1/2 tablespoons butter
- 1 (13.4 ounce) can Dulce de Leche
- 1 (3.4 ounce) box instant butterscotch pudding mix
- 7 ounce marshmallow cream
- 1/2 cup cocktail peanuts, chopped
For the Topping:
- 1/2 cup cocktail peanuts, chopped
Instructions
For the Fudge:
- Line a 8x8-inch baking pan with foil making sure the foil hangs over the edge; spray with non stick cooking spray.
- In a medium saucepan combine the white chips, butter, Dulce de Leche, pudding mix, marshmallow cream and peanuts; heat until melted and smooth.
- Pour hot fudge in prepared pan.
For the Topping:
- While fudge is still hot immediately sprinkle on peanuts, press down with the palm of your hand.
- Refrigerate until set (about 2 hours).
- Use foil to lift out the fudge; remove foil and cut into small squares.
