Cherry Brownie Cups
Chocolate covered cherries!!!! YUM!!! Brownie batter with a cherry cookie center, a whole cherry nested in the center topped with a cherry butter frosting ! What’s not to LOVE!
Cherry Butter Cookie Recipe
Ingredients
1/2 cup butter, softened
1 tablespoon plus 1 teaspoon cherry juice
2 cups sugar 1 large egg
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
3 tablespoon sprinkles
1 – 10 ounce jar maraschino cherries, drained and chopped
2 brownie mixes plus the ingredients on the box to make the brownies (usually 1 egg, oil and water)
1 recipe Cherry Butter Frosting (recipe below)
Directions
Preheat oven to 350 degrees. Combine butter and sugar and cherry juice. Beat until fluffy. Add egg, beating until combines.
Combine flour, baking powder, and salt. Gradually add flour mixture to butter mixture. Beat in Sprinkles and cherries.
Make brownie mix as directed on the box. Spray muffin tins with non stick cooking spray. Using a small cookie scoop (about 1 heaping tablespoon), scoop batter into the bottom of the prepared muffin cups, shape the cherry butter cookie dough into small balls and place in the center of the brownie mix in the bottom of the muffin cup.
Bake 15 minutes. Cool in muffin tins completely then remove. Once the cherry brownie cups are cooled place a whole maraschino cherry in the sunken center and top with Cherry Butter Frosting! (recipe below)
Cherry Butter Frosting Recipe (makes 4 dozen cups)
Ingredients
3/4 cup butter, softened
2 pounds powdered sugar
1/3 cup milk
2 teaspoons cherry juice
milk
sprinkles (optional)
Directions
Beat butter until smooth. Gradually add 2 cups powdered sugar, beating well. Slowly beat in the 1/3 cup milk and the cherry juice. Gradually beat in remaining powdered sugar. Beat in additional milk until frosting reaches spreading or piping consistency. If desired, add sprinkles. Makes about 4-1/2 cups This is a LBC original!
