Chicken Fantastic
I owe this chicken fantastic recipe to my Grandma. She loved collecting church recipe books. I think this one came from one of those books.
Transform this dinner from a meat and potatoes meal to an oriental meal by simply adding pineapple chunks.

Ingredients
- 2 large chicken breasts
- 5 chicken thighs
- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour plus 2 tablespoons, divided
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 large onion, chopped
- 1 large bell pepper, chopped
- 1 tablespoon Siracha Chili Sauce
- 1 1/2 cups water
- 1 2/3 cups ketchup
Instructions
- Rinse and pat chicken dry.
- Pour oil in a large skillet.
- Heat for frying chicken.
- Combine the 1/2 cup flour, salt and pepper.
- Dredge the chicken in the seasoned flour and place in hot oil.
- Brown chicken and remove from pan.
NOTE: just brown the chicken you don't need to get it all the way done. The chicken will simmer in the sauce to finish the cooking process.
- Saute the onion, bell pepper and garlic.
- Sprinkle the 2 tablespoons of flour over vegetables and cook for a minute.
- Stir in the Siracha, water and ketchup.
- Stir to combine.
- Add the chicken.
- Cover and simmer 50 to 60 minutes.
- Baste occasionally.
- Skim off any excess fat.
