How to Make Clay Pot Jalapeno Cornbread Muffins

- In a small bowl add the muffin mix, ingredients listed on the box (I used Jiffy), shredded cheddar cheese and jalapeno peppers.
- Spoon batter into prepared pots and bake 16 minutes.

- Place COLD pots in a COLD oven, turn the temperature to 400°. Once the oven reaches 400°, turn the oven off and remove the pots.

- Soak in warm water a few minutes to loosen any bits of food.
- To remove stubborn food items, use hot water without detergent and a gently abrasive pad
- TO REMOVE ODOR: Fill with enough warm water to cover pots add 2 tablespoons baking soda. Soak clean pots a few minutes.

- BREADS—Use a piece of parchment paper to cover the hole. Let the dough rise as normal (in a bowl) Divide dough into small portions for dinner rolls, and place in seasoned small pots to rise again and bake.

Clay Pot Jalapeno Cornbread Muffins
A fun addition to your next backyard barbecue!
Ingredients
- 6- (2-7/8 inch) terra cotta clay pots
- 1 (8.5 ounce) box corn muffin mix ( I used Jiffy)
- 1 large egg
- 1/3 cup milk
- 2 tablespoons jar jalapeno peppers-hot with seeds- mild without seeds
- 1/3 cup shredded cheddar cheese
- 2 tablespoons unsalted butter, melted
Instructions

- Preheat oven to 400°.
- Once your pots have been seasoned, spray the bottom with non stick cooking spray, place cut pieces of parchment paper circles in the bottom of each pot, spray the top of the paper to keep it in place.
- Rub oil around the inside of each pot.
- Place pots on a baking pan lined with foil.
- Fill each pot 2/3 full.
- Bake 16 minutes or until a wooden toothpick inserted into the center comes out clean.
- Brush on melted butter and serve.
Notes
How to Store Cornbread Muffins in Clay Pots:
Cover each pot with plastic wrap. If serving the next day, store on the counter top otherwise store in the refrigerator.
How to Reheat Cornbread Muffins in Clay Pots:
Place cold pots in a cold oven, turn the temperature to 400°. Once the oven reaches 400°, turn the oven off and remove the pots. THE POTS WILL STAY HOT/WARM UP TO 30 MINUTES.
How to Seal the Bottom Hole:
IF YOU HAVE A HOLE AT THE BOTTOM OF YOUR TERRA COTTA POT: Spray the bottom of the pot with non stick cooking spray, place pot on a piece of parchment paper, use a pencil to draw around the base of the pot (don't worry the eraser on the pencil will remove the pencil mark on the pots). Cut the circle on the inside of the line. Place circle in the bottom of the pot and spray again with non stick cooking spray. Refer to the post for photos.
NOTE: If you want to take the muffins from the pots, run an offset spatula around the edges. The muffin should come out as one piece.
