How to Make Corona Lime Cupcakes
CUPCAKE INGREDIENTS
- 2 (15.25 ounce) boxes of store bought white cake mix
- vegetable oil, divided
- egg whites
- lime gelatin
- lemon lime soda
- Corona Beer
Each cake mix will be a different cake flavor. Lemon Lime and Beer.
FOR THE LEMON LIME CAKE: To a medium mixing bowl, add one cake mix, 1/3 cup oil, 4 large egg white, lime gelatin, and lemon lime soda. Use the paddle attachment and mix cake batter until combined and creamy. Set aside to make the Beer Cake.
FOR THE CORONA BEER CAKE MIX: To a medium mixing bowl, add one cake mix, 1/3 cup oil, 4 large egg white, and Corona beer. Use the paddle attachment and mix cake batter until combined and creamy.
FOR THE CORONA LIME CUPCAKES: This cupcake recipe makes about 48 cupcakes which is fantastic for parties.
- Line 48 muffin cupcake with cupcake liners, preheat oven to 350°.
- Add 1 heaping tablespoon or 1½ tablespoons of lemon lime batter to a lined muffin cup.
- Add 1 heaping tablespoon or 1½ tablespoons of beer batter on top of the lime batter.
- Smooth with the back of a spoon or an off set spatula.
- Bake 20 to 23 minutes or until a toothpick inserted into the center comes out clean.
- Cool in muffin cups 10 minutes.
- Cool completely on a wire rack.
- When cooled completely frost.
How Many Tablespoons of Batter Will Fill a Cupcake Liner?
Fill your cupcake wrappers 2/3 full – around 3 tablespoons – or one decent ice scream scoop. Avoid filling your cupcake liners with too much batter as they will not bake properly and might overflow when they rise.

Cupcakes can be made ahead 1 day in advance, covered, and stored in an airtight container at room temperature or in the refrigerator. Frosting can also be made 1 day in advance, covered, and stored in the refrigerator until ready to use. Frosted or unfrosted cupcakes can be frozen up to 2-3 months. To ensure freshness, I like to wrap the container in plastic wrap until ready to use. Thaw overnight in the refrigerator.

- powdered sugar

- Beat softened butter with an electric mixer on medium speed until smooth and creamy, making sure to scrap the sides of the bowl.
- Add sugar one cup at a time until well incorporated.
- Add beer on tablespoon at a time until the right consistency is reached for either piping or spreading.
How to Make Lime Buttercream Frosting WITHOUT Beer
- ¾ cup unsalted butter, softened
- zest of 2 limes
- 1 (2 pound) bag powdered sugar
- 1/3 cup milk
- 4 teaspoons fresh lime juice
- green food coloring (optional)

HOW TO MAKE GRASS FROSTING: To make your frosting look like grass, spoon frosting into a piping bag fitted with a #233 piping tip. Make a pile of frosting and while still pressing the frosting out pull up. Work your way around the outside and then the inside. If you don’t want the grass look use the #4B piping tip.

- 1¼ cups Corona beer
For the Corona Beer Frosting:
- 1½ cups unsalted butter, softened
- 8 cups powdered sugar
- 4 tablespoons Corona beer
For the Lime Cupcake WITHOUT Beer:
- 1 (15.25 ounces) box white cake mix
- 1/3 cup vegetable oil, divided
- 4 egg large whites, divided
- 1 (3 ounce) box lime gelatin powder
- 1¼ cups lemon lime soda
For the Lime Frosting WITHOUT the Beer:
- ¾ cup unsalted butter, softened
- zest of 2 limes
- 1 (2 pound) bag powdered sugar
- 1/3 cup milk
- 4 teaspoons fresh lime juice
