- Gather dough up around Brie, twisting it into a topknot.
- Place on prepared cookie sheet.
- Chill in the freezer for 15 minutes.

HERE ARE SOME TIPS FOR STORING BRIE:
Don’t leave it out at room temperature. Brie is a perishable cheese that’s sensitive to temperature. In general, you shouldn’t leave it out for more than 2 hours.
Wrap it properly. Wrap brie in parchment or waxed paper to allow the rind to breathe and stay dry. Avoid using plastic wrap.
Store it in the crisper drawer. Brie is better in this drawer than in the meat and cheese drawer.
