DARK CHOCOLATE TRUFFLE INGREDIENTS LIST-full printable recipe below in recipe card
- 1 cup heavy whipping cream
- 5 (4-ounce) semi-sweet chocolate bars, chopped
- 2 tablespoons unsalted butter
FOR THE CHOCOLATE COATING INGREDIENTS LIST
- 2 (4-ounce) semi-sweet chocolate bars
- ¼ cup vegetable shortening
FOR THE OPTIONAL TOPPINGS INGREDIENTS LIST
- red, pink, and white melting wafers, melted
- sprinkles
DARK CHOCOLATE TRUFFLE INSTRUCTIONS
- In a large microwave-safe bowl, add the heavy cream, chocolate, and butter.
- Heat for 1 minute and 30 seconds; stir until smooth, shiny, and all butter is melted.
- Cover and chill in the refrigerator for 4 hours or until firm enough to roll.
- Roll into 1-inch size balls; place on a cookie sheet lined with wax or parchment paper.
- Refrigerate an additional 1 hour or until firm.
- TIP: To make the truffles into balls, I started with a small cookie scoop that lent a 1-inch ball.
FOR THE CHOCOLATE COATING
- In a medium microwave-safe bowl, add the chocolate and shortening.
- Microwave on high in 30-second intervals, stirring between each, until melted and smooth (about 1 minute and 30 seconds in total).
- Use a fork and dip each ball in the melted chocolate mixture. shake off excess, and place on a cookie sheet with wax or parchment paper.
- Place the formed chocolate into the refrigerator to harden (about 15 minutes). Store in an airtight container on the counter for up to 2 weeks. NOTE: Do not refrigerate as this can cause the chocolate to become discolored and develop a white film due to the cocoa butter separation.
FOR THE OPTIONAL TOPPINGS
- Add a touch of Valentine’s Day to these truffles with melted candy! Melt candy and pour it into piping bags or zip-top bags. Snip the end or corner, and in a back-and-forth motion, add color to your truffles. While the candy is still wet, add sprinkles!

My favorite grocery store chocolate is Ghirardelli. If you have a Trader Joe’s in your area, I highly recommend the Trader Joe’s Imported from Belgium Dark Chocolate Bars.
- CHILLED TRUFFLE FILLING: Don’t rush the chilling process. If your truffle mixture isn’t firm enough after chilling, try whipping it very briefly with a mixer.
How to Store Dark Chocolate Truffle Candies
To store chocolate truffles, keep them in a cool, dry, dark place at room temperature, ideally between 60°F and 68°F, in an airtight container to prevent them from absorbing odors and moisture; do not refrigerate as this can cause the chocolate to become discolored and develop a white film due to cocoa butter separation

Only the best chocolate for these truffles! I used Semi-Sweet Ghirardelli! With only FOUR ingredients, including the top coating of chocolate, you can’t deny that these truffles should be on your to-do list!
About Freeze-Dried Fruit in Truffles
Mix chopped freeze-dried fruit into the truffle-filling mixture. As time goes by, the freeze-dried fruit will soften while in the truffles.

Ingredients
For the Truffles
- 1 cup heavy whipping cream
- 5 (4 ounce) semi sweet chocolate bars, chopped

For the Chocolate Coating
- 2 (4 ounce) semi sweet chocolate bars, chopped
- 1/4 cup shortening
For the Optional Toppings
- red, pink and white candy melts, melted
- sprinkles
Instructions
For the Truffles:
In a large microwave-safe bowl, add the heavy cream, chocolate, and butter. Heat 1 minute and 30 seconds, stir until smooth, shiny and all butter is melted. Cover and chill in the refrigerator for 4 hours or until firm enough to roll. Roll into 1-inch size balls; place on a cookie sheet lined with wax or parchment paper. Refrigerate an additional 1 hour or until firm.
TIP: To make forming the truffles into balls I started with a small cookie scoop that lend a 1-inch ball.
