Imagine sinking your teeth into a perfectly baked potato, filled with tender and smoky barbecue beef, and topped with a dollop of creamy coleslaw. The perfect summer dinner.
A giant baked potato filled with sweet tender barbecue beef and a layer of coleslaw. Comfort food at its finest. This delicious baked potato is my copycat version of the Roundup BBQ Potato served at Troubadour Tavern in Fantasyland at Disneyland for Pixar Fest. The potato has brisket burnt ends with barbecue sauce, creamy slaw, pickle spear and onion flavored snacks. It was one of our favorite all in one dinners. Now you can make this fan favorite recipe at home!
How to Make Barbecue Beef Stuffed Baked Potatoes
There’s nothing like a sweet, tangy sauce mixed with shredded beef and piled high on a bun. But these stuffed potatoes are way better! For easy clean up the beef is made in the slow cooker. Make an extra batch of beef and store in the freezer for an easy weeknight dinner. The perfect summer dinner. When it’s too hot to turn on the oven and stand outside by the grill, using your slow cooker is the way to go.
These baked potatoes are huge and I honestly I can only eat half of one.

MORE TOPPING OPTIONS
Maybe you’re thinking… wonder if my guests don’t like coleslaw or think it’s a weird idea. First, I would encourage them to try it. While it may sound weird it is delicious. The savory beef with the sweet creamy coleslaw are a heavenly combo. It’s a challenge of a hostess when serving multiple people with different pallets. My solution for this all in one dinner is to create a baked potato bar. Below are a few topping ideas that will compliment the barbecue beef and baked potato. Oh, and also the barbecue beef recipe can easily be adapted for pork or chicken.
- BUTTER
- SALT AND PEPPER
- SHREDDED CHEESE
- CHOPPED GREEN ONION
- SOUR CREAM
- BUTTER
- BACON
- EXTRA BARBECUE SAUCE
Hot Summer Cooking Solution
It’s hot and the last thing you want to do is heat up your house from baking giant potatoes. Below are a few suggestions about how you can keep your house cool and still enjoy a delicious comfort food meal.
BAKED POTATOES
- MICROWAVE: Scrub the potato under running water, prick it with a fork, then place it on a microwave-safe plate. Microwave for about 5 minutes, flip it over, and microwave it for about 5 more minutes. Let the potato cool for just a few minutes, until it’s safe to handle. Cut the potato lengthwise so that it opens and forms a natural bowl. NOTE: THE TIME DEPENDS ON THE SIZE OF THE POTATO-ADJUST FOR SIZE AND QUANITY.
- OUTDOOR GRILL: Heat grill to medium heat. Wash and dry potatoes. Poke potatoes all over with a fork. Rub with olive oil and sprinkle with salt. Roll each potato up in aluminum foil and fold the ends in. Place potatoes on the grill and close the lid. Grill until fork-tender, rotating every 15 minutes or so, about 1 hour. NOTE: THE TIME MAY TAKE LONGER FOR EXTRA LARGE POTATOES
- AIR FRYER: Using a fork, pierce the potatoes all over. Spray each potato with a few spritzes of oil and season with 1/4 teaspoon salt. Arrange in the basket, and air fry 400F until a knife can easily be inserted into the center of each potato, about 35 to 40 minutes, turning halfway through cooking time. Serve the potatoes, split open topped with remaining salt and pepper and your favorite toppings. NOTE: THE TIME MAY TAKE LONGER FOR EXTRA LARGE POTATOES
BARBECUE BEEF
- SLOW COOKER: Grilling your meat is an option if you don’t mind slicing the beef instead of shredding it. But for a juicy tender shredded beef I recommend using a slow cooker.
How to Freeze and Thaw Barbecue Beef
TO FREEZE: Move the cooled beef with tongs to a freezer safe airtight container or freezer bag. Label and freeze up to three months. TO THAW: Place the beef in the refrigerator the night before. Heat beef in a saucepan on top of the stove. Serve for sandwiches or for stuffed baked potatoes.
