Easy Chocolate Cookie Butter Swirl Sandwich Cookies | These easy to make cookies start with a store bought cookie and are transformed into party cookies! Start with my easy to make Nutella and Cookie Butter Swirl filling sandwiched between two store bought shortbread cookies. Trust me your guests will never know your cookies are not homemade. They are SEMI-HOMEMADE!
To make the swirl add some of the nutella filling to a 12-inch piping bag and some of the cookie butter filling to another 12-inch bag (don’t fill the bags too full). Fit a 16-inch piping bag with a large piping tip like a 1M and snip off the tip. Snip the tip off of the 12-inch bags and slide into the large piping bag. TIP: I like to close the two smaller bags with a rubber band.
Easy Chocolate Cookie Butter Swirl Sandwich Cookies
Ingredients
- 2 (11.20 ounce) containers Keebler classic shortbread cookies
For the Nutella Filling:
- 1 (7.7 ounce) jar Nutella
- 4 ounces cream cheese, softened
- 4 cups confectioners' sugar
- 3 tablespoons milk
For the Biscoff/Cookie Butter Filling:
- 1 cup Biscoff/cookie butter
- 4 ounces cream cheese, softened
- 4 cups confectioners' sugar
- 4 tablespoons milk
Instructions
For the Nutella Filling:
- In a medium bowl cream together the Nutella and cream cheese until combined.
- Add the confectioners' sugar 1 cup at a time alternating with 1 tablespoon of milk at a time until all the sugar and milk have been incorporated.
For the Biscoff/Cookie Butter Filling:
- In a medium bowl cream together the Biscoff/Cookie Butter and cream cheese until combined.
- Add the confectioners' sugar 1 cup at a time alternating with 1 tablespoon of milk at a time until all the sugar and milk have been incorporated.
To Assemble:
- Spoon some of the Nutella filling into a 12-inch piping bag.
- Spoon some of the Biscoff/Cookie Butter into a 12-inch piping bag.
- DO NOT FILL THE BAGS TOO FULL
- Fit a large 16-inch piping bag with a large tip (like a 1M); cut off the end.
- Cut the ends off the filled bags and slide into the large bag making sure the tips of the piping bags fit into the piping tip.
- Pipe a swirl on half of the cookies and place another cookie on top.
- Store in the refrigerator.
