I am a huge fan of a BIG SOFT CHEWY COOKIE and these deliver all those wants in a cookie. I have a secret ingredient that makes the perfect soft cookie every time! Want to know what it is? A cake mix! I know! Who knew? But it is the perfect ingredient to a soft cookie.
Easy Last Minute Christmas Cookies

Ingredients
For the Cookies:
- 1 (15.25 ounce) white cake mix
- 2 large eggs
- 1/3 cup vegetable or canola oil
- 4 tablespoons sprinkles {assorted colors}
For the Frosting:
- 1 cup shortening
- 2 teaspoons clear vanilla extract
- 5 cups confectioners' sugar
- 4 tablespoons milk
- sugar toppers and sprinkles
Instructions
- Preheat oven to 375° and line 2 cookie sheets with parchment paper.
- Add cake mix, eggs, and oil into a large mixing bowl; mix until well combined.
- Add sprinkles.
- Using an ice cream scoop, place cookies onto prepared pans.
- Bake 10 to 12 minute or until the bottom becomes lightly brown.
- Slide the cookie still on the parchment paper either onto a wire cooling rack or onto the counter to cool completely.
For the Frosting:
- In a medium mixing bowl, whip shortening until light and fluffy.
- Add the vanilla, combine.
- Add the sugar 1 cup at a time making sure the sugar is completely combined.
- Add milk, 1 tablespoon at a time until the frosting reaches spreading consistency.
- Using an off set spatula spread onto each cookie; top with sugar topper and sprinkles.
