Eggnog Glazed Donut Muffins
If you love cake donuts than you are going to love these eggnog glazed donut muffins. Not only big in size but also big in flavor.
Ingredients
For the Muffin:
- 1/4 cup butter, softened
- 1/4 cup vegetable oil
- 1/2 cup granulated sugar
- 1/3 cup light brown sugar
- 2 eggs
- 1-1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2-2/3 cups all-purpose flour
- 1 cup eggnog
For the Glaze:
- 3 tablespoons butter, melted
- 1 cup confectioners' sugar
- 3/4 teaspoon vanilla extract
- 2 tablespoons hot water
Instructions
For the Muffin:
- Preheat oven to 425 degrees.
- Line a muffin pan with 12 muffin liners.
- Cream together the butter, vegetable oil, and sugars until smooth.
- Add the eggs one at a time until combined.
- Stir in the baking powder, baking soda, nutmeg, cinnamon, salt and vanilla.
- Stir the flour into the butter mixture alternately with the eggnog, making sure everything is combined.
- Spoon the batter evenly into the prepared pan, filling the cups nearly full.
- Bake for 15 to 17 minutes or until a toothpick inserted into the center comes out clean.
For the Glaze:
- Mix together the butter, confectioners' sugar, vanilla and water until smooth.
- When muffins have cooled slightly, dip the muffin crown into the glaze and allow the glaze to harden.
