Note: the food safe spoons are from Hobby Lobby, the Washi tape is from the dollar section at Target and the mini heart sprinkles are from Michael’s.

Funfetti Sugar Cookie Strawberry Shortcakes
Ingredients
- 2 (16.5 ounce) Pillsbury Sugar Cookie Dough Rolls
- 3/4 cup dry yellow cake mix
- 4 tablespoons sprinkles (red, pink, white)
- 1 pound strawberries fresh or frozen
- 8 ounce cool whip topping
- optional: sugar to sweeten strawberries
- mini heart shaped sprinkles
Instructions
- Preheat oven to 350 degrees.
- Line a 10x15-inch cookie sheet with foil and spray with non stick cooking spray.
- In a large bowl combine the cookie dough, dry cake mix and sprinkles.
- Knead together until well combined.
- Pour onto the prepared cookie sheet.
- Press evenly all the way to the edges making sure the dough is level.
- Bake 35 minutes.
- Let cool in pan on a cooling rack 10 minutes.
- Using the foil lift the cookie from the pan and place on a flat surface.
- Using a 2 1/8-inch biscuit cutter cut 24 circles.
- Place on cooling rack to cool completely.
To Fill the Half Pint Mason Jars:
- Place a cookie at the bottom.
- Add a few strawberries and cool whip.
TIP - For a mess free way to add cool whip, first place in a zip top bag, cut one corner and pipe into the jar.
- Press another cookie on top of the cool whip spreading the cool whip to the edges, add heart sprinkles around the edges so that they are on the cool whip.
- Repeat layers, cookie, strawberries, cool whip, sprinkles.
- End with a cookie on top.
DO NOT ASSEMBLE UNTIL READY TO SERVE
