Ginger Snap and Eggnog Cookie Pops
My two favorite holiday flavors come together in these fun and festive cookie pops. I named them cookie pops because that’s what I used! NO BAKING in the making of these cookie pops and NO SUGARY FROSTING! I’m truly NOT a fan of the “cake pop” they are too sweet for me. But I really liked these cookie pops. The ground up ginger snap cookies take the place of cake and eggnog truffles serve as the frosting. Wilton has a NEW holiday candy melt flavor EGGNOG!

I chose to use my pencil toppers so that my guests not only got a cookie pop but also a holiday pencil. You can use lollipop sticks in place of the pencil toppers.
Ginger Snap and Eggnog Cookie Pop Recipe (makes 19)
Ingredients
16 ounce bag of ginger snaps (finely ground)
4 ounce white chocolate (coarsely chopped and melted)
4 ounce cream cheese, softened
1/8 teaspoon nutmeg
1/8 teaspoon cinnamon
1-1/2 to 2 – 10 ounce bags Wilton Eggnog flavored candy melts
19- lollipop sticks or holiday pencils and pencil toppers
sprinkles(optional)
nutmeg for sprinkling (optional)
Directions
Prepare the container you will be displaying your cookie pops in. I filled a bucket with rice and topped it with white lights, fiber fill and fake snow. You can also use Styrofoam if you choose to use lollipop sticks. I think trying to press a pencil into it might be too hard. The rice worked perfectly. Don’t want to use fiber fill replace it with cotton candy but DON’T use lights.
In a food processor grind cookies until finely ground.
Mix together the melted white chocolate, the cream cheese and spices. Add to the cookie crumbs. Mix until cookie mixture comes to a ball.
I used a cake pop mold to make my balls but you can totally roll them into 1-1/2-inch balls by hand.
Put candy melts in a medium bowl and melt in microwave.
Dip either the lollipop stick or the pencil topper in melted candy and stick through cookie pop.
Place on a wax paper line cookie sheet and refrigerate until candy hardens. (About 5 minutes)
Dip into melted candy, use a spoon to completely cover cookie pop, shake off excess candy, add holiday sprinkles or nutmeg.
Place your container in the refrigerator and put each cookie pop in the container as you finish them. Refrigerate until candy hardens. (About 15 minutes) This is a LBC original!

How delicious are these pops. I’ve been blogging for a few years, but I have to say this is the first time I’ve seen the plastic pencil topper. Great idea, my pops are always falling over.
