What is Candy Corn?
To fully appreciate the process of making homemade candy corn marshmallows, it’s important to understand what candy corn is. Candy corn is a popular Halloween treat with a distinct tri-color design, typically with a base of yellow, a center of orange, and a tip of white, mimicking the appearance of actual corn kernels. This sweet confection is made primarily from sugar, corn syrup, gelatin, and flavorings, giving it a unique combination of flavors reminiscent of honey and vanilla. Understanding the essence of candy corn is essential for creating the perfect candy corn marshmallows that capture the essence of this beloved seasonal candy. Since candy corn is basically all sugar I knew it would make beautiful delicious marshmallows.

To begin making the candy corn-flavored marshmallow mixture, you will need to gather your ingredients and equipment. Since candy corn is made from sugar there’s no need for sugar or corn syrup. Candy corn and water are all you need. Add the candy corn and water to a large pot then, bring the mixture to a boil and let it cook until it barely reaches the hardball stage (252° about 15 minutes) on a candy thermometer. Hard ball stage temperature is 250°-265°. Once the candy reaches room temperature, turn off the heat, and let the candy rest until the temperature cools down to 212° (about 15 minutes). While the candy is boiling, in a large mixing bowl, bloom gelatin in cold water to soften it before adding the hot sugar syrup.
Once the candy has cooled add it to the bloomed gelatin. Using a whisk attachment, start beating at a low speed until the candy cools enough to beat (about 2 minutes) the mixture at a high speed. Beat until the candy becomes thick and fluffy, resembling marshmallow fluff (about 8 minutes).
While the candy is beating prepare the pan. Generously sprinkle through a fine mesh sifter powdered sugar into a 9×9-inch baking dish or pan (for thinner marshmallows you may use a 9×13-inch baking dish). Move the sugar around the sides of the dish. Make sure all four sides and the bottom of the dish are coated. Next, pour the candy corn marshmallow mixture into a prepared dish, and smooth the top with a spatula. Add a dusting of powdered sugar and allow the mixture to set for several hours, or overnight until it is firm to the touch. Finally, dump the marshmallow onto a lightly sugar-dusted surface. Cut the marshmallows into squares, roll all four sides in powdered sugar, and serve them as a festive and delicious treat for Halloween gatherings or as a fun homemade gift. TIP: USE A PASTRY BRUSH AND BRUSH OFF ANY EXCESS SUGAR
Does Weather Affect the Making of Marshmallows?
Like many candies, the enemy of marshmallows is moisture, including humidity. Prolonged exposure to heat can also cause them to melt or otherwise deteriorate. Try to plan your candy-making around a low-humid day.
How to Attach Candy Corn To Marshmallows
Decorating and Serving Your Homemade Candy Corn Marshmallows is a delightful way to showcase your creativity in the kitchen and impress your family and friends with these seasonal sweets.
Once you have cut your homemade candy corn marshmallows into small squares, it’s time to elevate your presentation. Get creative with decorating by dusting the marshmallows with powdered sugar or cocoa powder for a finished touch. For added flair, consider dipping the marshmallows in melted chocolate and topping them with crushed candy corn or white, yellow, and orange sprinkles. TO ADD WHOLE CANDY CORN TO THE TOPS OF EACH MARSHMALLOW-dip finger in water, add a dab onto the top of a marshmallow, and press a candy corn onto the marshmallow where the water was added. The watered-down powder sugar acts like glue and will hold the candy in place.

HOMEMADE CANDY CORN MARSHMALLOWS FAQ’s
Weather or climate is another area that can significantly affect candy making and, particularly, meringue or marshmallows. Living in a particularly humid climate, if it’s a rainy day, or the temperature of your home (is too warm) are all things that can prevent marshmallows from setting up properly.
There can be many factors as to why homemade marshmallows didn’t set. One of the most common issues is usually related to the temperature of the sugar syrup. If the sugar syrup doesn’t reach the correct temperature or if it’s overcooked, it can affect the final texture of the marshmallows.
Yes, over-mixing takes away from the fluffy texture.
It’s important to remember that whenever you are cooking with sugar, hitting the right temperature is essential.
Store homemade marshmallows layered between sheets of wax or parchment paper in an airtight container. If kept in a dry place at cool room temperature, they should keep for about a month. Marshmallows that include mix-ins or that have been dipped in chocolate will have a slightly shorter shelf life.
Moisture from the air slips into the bag, and then into the marshmallows, filling up the air pockets. Which leaves you with glop. Bottom line: to keep marshmallows fresh and not sticky, you need to keep moisture out of the marshmallow bag once you open it.
