TIP: USE A LARGE POT, AS THE SYRUP BOILS IT WILL RISE DOUBLE. BOIL UNTIL THE THERMOMETER REACHES 235°.
PLACE THE MIXING BOWL IN A WATER BATH, POUR HOT CANDY INTO THE BOWL.
INSERT THE CANDY THERMOMETER INTO THE CANDY. WAIT UNTIL THE TEMPERATURE GOES DOWN TO 100° BEFORE MIXING.
MIX THE SYRUP UNTIL THE MIXTURE BECOMES CHUNKY (about 5 minutes). ADD SOFTENED BUTTER AND CONTINUE BEATING FOR AN ADDITIONAL 3 MINUTES OR UNTIL THE BUTTER MIXTURE IS CREAMY.

- Pour syrup into a medium saucepan.
- Insert a candy thermometer, and bring syrup to a low boil across the top of the syrup. Continue to boil until the candy thermometer reaches 235°.
- While the syrup is boiling, set up the water bath station. Add ice and cold water to a bowl large enough to hold a large mixing bowl.
- Once the boiled syrup has reached 235°, remove the candy digital thermometer from the pan and pour the hot syrup into the mixing bowl that’s in the water bath.
- Insert the thermometer onto the side of the mixing bowl. Keep syrup in the water bath until the temperature cools to 100° (about 7 minutes).
- Scrap down the sides, using a whisk attachment on a stand mixer, and beat on medium-high for 5 minutes. NOTE: The mixture will become chunky.
- Add softened butter, and continue whisking on high for 3 minutes or until the maple syrup butter is light, fluffy, and a creamy butter-like consistency.
- STORE in an airtight container in the refrigerator. MAKES ABOUT 2 CUPS
