This delicious purple dessert tastes nothing like the purple sweet potatoes you put on the dinner table. This vibrant purple yam is typically not available in USA grocery stores. You can try looking at your local Asian stores or Filipino grocery stores. Many confuse a purple sweet potato with a purple yam (Dioscorea alata). Most recipes (including this creamy ice cream recipe) are made from Ube Flavoring.
About Ube Flavoring
I purchased my Ube Extract on Amazon but if you have an Asian Supermarket in your area you might be able to pick the extract up there. FYI: Fresh Ube or Purple Yam has two seasons June and December. People say the Ube Extract or the Ube Yam gives a nutty vanilla flavor. I think it’s more of a vanilla coconut flavor, like eating a baked coconut macaroon. It’s a unique flavor and very delicious.
DISNEYLAND COPYCAT UBE ICE CREAM RECIPE
I was pleasantly surprised to discover this delicious ice cream at California Adventure in Carsland at the Cozy Cone Motel. The ice cream in the park has a little more coconut flavor compared to my homemade version. I think Disneyland added coconut extract to the ice cream recipe to get the added coconut flavor. The ice cream is considered a Halloween Treat (hence the black sprinkles). It was delicious and a must-have treat if you’re visiting the parks during the Halloween season.
How to Make Ube Ice Cream
For this recipe, I flavored the ice cream mixture with Ube and to give the purple ice cream a double punch I also flavored the sugar with Ube too. The purple root vegetable is all the purple you need. The Ube Extract not only offers a deeper Ube flavor it also has a deep purple color.

UBE SUGAR INGREDIENTS
- 1 1/8 cups sugar
- 1 teaspoon Ube extract/flavoring
RICH ICE CREAM INGREDIENTS LIST
- 1½ cups whole milk
- 1 1/8 cups ube sugar
- 3 cups heavy cream
- 1 teaspoon ube flavoring
UBE SUGAR INSTRUCTIONS
- Pour sugar into a glass or metal bowl, and add 1 teaspoon of ube flavoring. Stir until all the extract has been combined with the sugar. Set aside.
PURPLE YAM ICE CREAM INSTRUCTIONS
- In a medium bowl, whisk together the milk and ube sugar until the sugar is dissolved.
- Stir in the heavy cream and Ube flavoring.
- Turn the machine on; pour the mixture into the freezer bowl.
- Churn the ice cream until thickened, about 20 to 25 minutes. The ice cream will have a soft, creamy texture.
- If a firmer consistency is desired, let the machine go a little longer transfer the ice cream to an airtight container, and place it in the freezer or serve immediately.
PRO TIPS FOR A SUCCESSFUL ICE CREAM
- ICE CREAM BOWL: Freeze the ice cream maker bowl at least 2 days before using.
- COOL INSERTS: Not only does the bowl need to be frozen the ice cream machine and the inserts should also be cool. If you store your ice cream maker in the garage or a warm location bring it inside so it can come to room temperature before using.
- START THE MOTOR FIRST: Particularly when using an ice cream maker with a freezer bowl, it’s important to turn on the motor before pouring into the ice cream base. The bowl is so cold that the mixture will freeze immediately upon contact, so you’ll want it to already be in motion so that the ice cream won’t freeze onto the bowl in a chunk.
- ADDING MIX-INS: Adding candy, nuts, dried or fresh fruit can add new flavor and texture to the ice cream. Make sure the pieces are small (the size of a chocolate chip). Only add after the ice cream is already completely frozen. The ice cream maker won’t need more than a minute or two to stir them in.

THE BEST WAY TO STORE HOMEMADE ICE CREAM
Store ice cream in the main part of the freezer. Do not store ice cream in the freezer door, where ice cream can be subject to more fluctuating temperatures since the door is repeatedly open and shut. Keep the ice cream container lid tightly closed when storing in the freezer to reduce the formation of ice crystals.

FLAVORFUL IDEA
If you would like more of a coconut flavor try substituting coconut milk for the heavy cream. NOTE: Coconut milk is chunky at room temperature. TIP: Add the whole milk, ube sugar, coconut milk, and ube flavoring to a blender. Blend until smooth. Pour into ice cream maker bowl and churn.
