Jerk Chicken
This Jerk Chicken has the right combination of flavors. The chicken is sprinkled with a sweet spicy seasoning and grilled. Top off this Caribbean meal with a pineapple slaw. Jerk Chicken
Ingredients
For Pineapple Slaw:
- 3 heads baby bok choy, trimmed and thinly sliced
- 2 cups red cabbage, shredded
- 1/2 fresh pineapple, chopped
- 2 tablespoons cider vinegar
- teaspoons light brown sugar, packed
For the Jerk Chicken:
- 2 teaspoon light brown sugar, packed
- 2 teaspoons all-purpose flour
- 2 teaspoons Jamaican jerk seasoning
- 4 skinless, boneless chicken breast halves
Instructions
- In a large bowl combine the bok choy, cabbage and pineapple.
- Add the vinegar and brown sugar to a small jar; shake to combine and pour over pineapple mixture; stir to combine and set aside.
For the Jerk Chicken:
- In a large zip top bag add the brown sugar, flour and jerk seasoning; shake to combine.
- Add the chicken to the bag, close and shake to coat.
- Grill until all pink is gone approximately 20 minutes.
- Serve chicken with pineapple slaw.
