Light Blueberry Banana Muffins
These light blueberry banana muffins are full of flavor, large in size but low on calories. That best describes these muffins. At only 183 calories you can have a muffin and lose weight too!
Ingredients
- 1 cup quick-cooking rolled oats (not instant)
- 1/2 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup granulated sugar
- 1/4 cup ground flax seed or wheat germ
- 1-1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Optional: 1 tablespoon of chia seeds and 1 tablespoon of whole flax seeds
- 1-1/2 cups bananas, mashed (3 large)
- 1/4 cup butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Instructions
- Preheat oven to 375 degrees.
- Spray a 12-cup muffin tin with cooking spray and set aside.
- Combine oats, both flours, sugar, ground flax seed, baking powder, baking soda,salt and seeds {chia and flax} in a large bowl.
- Mix well and set aside.
- In a medium bowl, whisk together bananas, butter, egg and vanilla.
- Add banana mixture to dry ingredients and stir just until dry ingredients are moistened.
- Gently fold in blueberries.
- Divide batter among 12 muffin cups.
- Bake for 20 minutes, or until a toothpick inserted in the center of the muffin comes out clean. Cool on a wire rack.

Hi! I found your recipe searching pinterest. I was looking for banana muffin recipes for my ripe bananas. I also have frozen blueberries in my freezer. But, this morning I was in the mood for banana/walnut muffins and I substituted walnuts for the berries. They were delicious! I’m always looking for recipes with healthy ingredients. I will definitely make again with blueberries!!! : )
