Light Blueberry Coleslaw
Light Blueberry Coleslaw | Put a spin on your favorite summer salad by adding fresh sweet blueberries! Your favorite salad just a low cal make over and it’s just as delicious as the the full calorie version! Pulled pork, barbecue beef or your favorite hamburger, coleslaw is always the salad of choice. The sweetness of the salad pairs perfectly with a savory barbecued sandwich.
This semi homemade Light Blueberry Coleslaw will leave your guests happy. So pull out the grill, invite over some friends and have a great time with delicious food! I have three versions for you! The first one is low calorie, one that isn’t and my favorite combo version. The choice is up to you! When I make it I mix it up. I use Splenda for the sugar portion but use regular mayo instead of lite mayo. You can make it the way I make it or stick with all the regular ingredients or all the light ingredients.
Light Blueberry Coleslaw
Ingredients
For the Regular Version
- 1 (14 ounce) bag coleslaw mix
- 1/2 cup mayonnaise
- 1/4 cup granulated sugar
- 1/2 cup raisins
- 1 (6 ounce) container fresh blueberries
For the Light Version
- 1 (14 ounce) bag coleslaw mix
- 1/2 cup lite mayonnaise
- 1/4 cup Splenda
- 1/2 cup raisins
- 1 (6 ounce) container fresh blueberries
For Lady Behind The Curtain Version
- 1 (14 ounce) bag coleslaw mix
- 1/2 cup mayonnaise
- 1/4 cup Splenda
- 1/2 cup raisins
- 1 (6 ounce) container fresh blueberries
Instructions
For all Versions of the Coleslaw Recipe:
Pour the coleslaw mix to a large bowl; add the mayonnaise, sugar, raisins and blueberries. Mix to combine. Best if made early in the day and left to sit in the refrigerator until dinner.
