Light Raspberry White Chocolate Chip Muffins
I love my berries dipped in chocolate but I didn’t want something that was high in calories. So I created these delicious Light Raspberry White Chocolate Chip Muffins. First this muffin tastes like a healthy version of a raspberry cobbler and then you bite into a white chocolate chip and it changes to a sweet chocolate delight.

Light Raspberry White Chocolate Chip Muffins

Ingredients
- 1 cup quick-cooking rolled oats (not instant)
- 1/2 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup Splenda granulated sugar
- 1/4 cup ground wheat germ
- 1-1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon chia seeds
- 1 tablespoon of whole flax seeds
- 1 1/2 cups unsweetened applesauce
- 1/4 cup butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 (6 ounce container) fresh or frozen raspberries
- 2/3 cup white chocolate chips
Instructions
- Preheat oven to 375 degrees.
- Line a 12-cup muffin tin with cupcake liners and set aside.
- Combine oats, both flours, sugar, wheat germ, baking powder, baking soda,salt and seeds {chia and flax} in a large bowl.
- Mix well and set aside.
- In a medium bowl, whisk together applesauce, butter, egg and vanilla.
- Add applesauce mixture to dry ingredients and stir just until dry ingredients are moistened.
- Gently fold in raspberries and white chocolate chips.
- Divide batter among 12 muffin cups.
- Bake for 20 minutes, or until a toothpick inserted in the center of the muffin comes out clean. Cool on a wire rack.
