Mad Hatter Salad
Mad Hatter Salad |When bringing the same old coleslaw just isn’t enough. This salad coleslaw is simply the best! Full of fresh vegetables with sautéed nuts and top ramen noodles. Deliciously covered with a sweet dressing. Great for family, church or barbecue gatherings.
This is a sturdy salad, so taking it to potlucks makes perfect sense. It also serves 12 people which is great for a group meal. The flavors of this salad get better with time as the noodles and other ingredients absorb the delicious dressing. For a complete meal also make Onion Dip Burgers, Southern Beans and for dessert Mom’s Peach Cobbler.
Mad Hatter Salad
Ingredients
For the Salad:
- 1 (16 ounce) package coleslaw mix
- 8 green onion, chopped
- 1/2 cup butter
- 1 head fresh broccoli, cut into florets
- 2 (3 ounce) packages chicken flavored ramen noodles
- 1 cup slivered almonds
- 1 cup unsalted sunflower seeds
For the Dressing:
- 1/2 cup white sugar
- 1/4 cup apple cider vinegar
- 1/2 cup vegetable oil
- 1 teaspoon soy sauce
Instructions
For the Salad:
- In a large bowl, toss together the coleslaw mix, green onions and broccoli.
- Melt the butter in a large skillet over medium heat.
- Crumble the ramen noodles into a bowl, and mix with the almonds and sunflower seeds.
- Sprinkle the seasoning packets over all.
- Add to the skillet; cook and stir until noodles and nuts are toasted, about 8 minutes.
For the Dressing:
- In a jar with a tight fitting lid, combine the sugar, vinegar, oil, and soy sauce.
- Seal, and shake vigorously to blend.
- Just before serving, combine the slaw mixture with the nuts and noodles. Pour the dressing over all, and stir briefly to coat.

My mother in law use to make a dish she called Sumi Salad that is somewhat similar.

No this salad is not sweet the vinegar cuts through the sweetness from the sugar. VERY tasty though. 🙂

I’m going to try to make a healthier version with out the ramen and sugar. Otherwise it sounds really yummy.
I have been able to get my husband to eat coleslaw who never liked cabbage. What a great tasting side dish>>
I made the salad as written but I served the dressing and topping on the side so people could add their own depending on if they have sodium issues, sugar issues, etc. I also served sliced, baked chicken breast on the side and fresh mandarin oranges and that made a complete meal. Dressing and toppings are delicious
