Mango Barbecued Jerk Chicken
Mango Barbecued Jerk Chicken | Bring a little bit of the tropics to your dinner table with this sweet and spicy jerk chicken. Jerk is a style of cooking native to Jamaica and the perfect blend of sweet, hot, herbal and spicy chicken!
This recipe has layers of flavor starting with a citrus marinade. Then a jerk rub and a basting of homemade mango barbecue sauce. The perfect solution to a great backyard barbecue, luau or pool party! You can also try my Jerk Chicken with a Pineapple Slaw!
Mango Barbecued Jerk Chicken
Ingredients
For the Mango Barbecued Jerk Chicken:
- 2 tablespoons orange juice
- 1 1/2 teaspoons lime juice
- 1 1/2 teaspoons olive oil
- 1 tablespoon Caribbean jerk seasoning
- 1 garlic clove, minced
- 4 boneless skinless chicken breasts (about 1 pound)
For the Mango Barbecue Sauce:
- 3 tablespoons mango chutney
- 1 1/2 teaspoons lime juice
- 1 1/2 teaspoons honey
- 1 teaspoon Dijon mustard
- 1/4 teaspoon of jerk seasoning
- 1/4 teaspoon fresh minced ginger root
- 1 tablespoon minced fresh cilantro
- 1 1/2 teaspoons sesame seeds, toasted
- 1 teaspoon grated orange peel
Instructions
For the Mango Barbecued Jerk Chicken:
- In a large zip to bag combine the Orange juice, lime juice, oil, Jerk seasoning and garlic.
- Add the chicken.
- Seal bag and turn to coat refrigerate and marinate up to 2 hours but no longer.
- Drain and discard marinade.
- Grill chicken on bother sides and baste with half of the barbecue sauce.
- Grill until chicken juices run clear (about 20 minutes).
- Place on serving dish; serve the remaining Mango Barbecue Sauce on the side.
For the Mango Barbecue Sauce:
- In a small bowl, combine the chutney, lime juice, honey, mustard, jerk seasoning and ginger, cilantro, sesame seed and orange peel; set aside.

I would suggest 350 degrees and bake the chicken for 20 to 30 minutes. 🙂
