Mochaccino Cupcakes
Mochaccino Cupcakes | These light and fluffy cupcakes have the perfect blend of coffee and chocolate. No one will be able to resist the light and fluffy coffee buttercream frosting! A sophisticated cupcake for an adult birthday party, dinner party or even game day!
When coffee and chocolate come together you get a delicious cupcake. The added wafer cookie adds another level of flavor and texture. These Mochaccino Cupcakes were a huge hit at the church luncheon. Even the people (including me) that don’t like coffee loved these cupcakes! Like my White Chocolate Espresso Mousse. This dessert might be little in size but it packs a punch of flavor!
WHAT MAKES A GREAT CUPCAKE?
- Use the best ingredients.
- Bring ingredients to room temperature.
- Don’t over mix the batter.
- Use a scoop to fill cupcake liners (don’t eyeball it).
- Preheat the oven.
- Bake in the center of the oven.
You can freeze cupcake/cake batter? To freeze, spoon batter into a labeled zip top bag or container with a tight fitting lid and place in freezer. When ready to use, set batter on the counter to come to room temperature. Spoon into a large mixing bowl and mix until light and fluffy (about 2-3 minutes).

Mochaccino Cupcakes
Ingredients
For the Cupcakes:
- 3/4 cup butter
- 3 eggs
- 1-3/4 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon instant espresso powder
- 1/2 cup hot water
- 1 cup milk
- 2 cups sugar
- 2 teaspoons vanilla
- 1 cup dark, bittersweet, or semisweet chocolate pieces
For the Coffee Butter Cream Frosting:
- 1/3 cup butter, softened
- 4 cups confectioners' sugar
- 1 tablespoon instant espresso powder
- 6 tablespoons hot water
Instructions
For the Cupcakes:
- Line 30 muffin cups with paper bake cups.
- Preheat oven to 350 degrees.
- Line muffin cups with 30 cupcake liners.
- In a medium bowl stir together flour, the 1 cup cocoa powder, the baking soda, baking powder, and salt.
- Stir together the espresso powder and hot water.
- In a 2-cup glass measuring cup combine milk and coffee. Set aside.
- In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds.
- Gradually add sugar, about 1/4 cup at a time, beating on medium speed until combined.
- Scrape side of bowl; beat for 2 minutes more.
- Add eggs, one at a time, beating well after each addition.
- Beat in vanilla.
- Alternately add flour mixture and milk mixture to butter mixture, beating on low speed after each addition must until combines.
- Stir in chocolate pieces.
- Spoon batter into prepared muffin cups, filling each about three-fourths full.
- Use the back of a spoon to smooth out batter in cups.
- Bake about 18 minutes or until tops spring back when lightly touched.
- Cool cupcakes in muffin cups on wire racks for 5 minutes.
- Remove cupcakes from muffin cups.
- Cool completely on wire rack.
- Using a pastry bag fitted with a star tip, pipe frosting onto cupcakes.
- Insert wafers.
- Dust with additional cocoa powder.
For the Coffee Butter Cream Frosting:
- In a large mixing bowl beat butter.
- Gradually add 1 cup confectioners' sugar, beating well.
- Stir together the espresso powder and hot water.
- Beat in 3 tablespoons of the coffee.
- Gradually beat in 3 cups additional confectioners' sugar.
- If necessary, beat in additional coffee until butter cream reaches a spreading/pipping consistency.
