Pumpkin Spice Caramel Latte Cupcakes
A light and fluffy cupcake loaded with pumpkin and espresso powder. A wonderful layer of caramel, topped with an incredible pumpkin spice latte frosting.
Ingredients
For the Pumpkin Spice Latte Cupcakes:
- ¼ cup hot water
- 2 teaspoons espresso powder
- 2 large eggs
- ½ cup granulated sugar
- ¼ cup light brown sugar, packed
- 1 cup pumpkin puree
- ½ cup vegetable oil
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1½ teaspoons pumpkin spice
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- optional: ½ cup caramel chips, chopped (I used Ghirardelli)

Instructions
For the Pumpkin Spice Caramel Latte Cupcakes:
Preheat oven to 350°. Line muffin tins with cupcake liners and set aside.
In a small bowl add the hot water and espresso powder. Stir to dissolve the powder.
In a large mixing bowl beat together the eggs, sugars, pumpkin, oil and espresso mixture until combined, light and fluffy.
In a separate medium bowl whisk together the flour, salt, pumpkin spice, baking powder and baking soda. Add the dry ingredients to the wet ingredients. Mix until combined. Stir in optional caramel chips. Using an ice cream scooper with a trigger release, scoop the batter into the cupcake liners until each is 3/4 full.
Bake 20 minutes or until a toothpick inserted into the center comes out clean. Cool completely before adding the caramel layer and frosting.
