A light and fluffy cupcake, dipped in a homemade cola syrup and topped with a creamy cola butter frosting. I call these cupcakes soda pop cupcakes, because all you need is a cake mix and a can of soda pop! Super easy with only TWO ingredients, but what’s on top is what will knock your socks off! Starting with the cola syrup! Once the cupcakes are cooled dip the tops in the cola syrup.

Semi Homemade Coca Cola Cupcakes
Ingredients
For the Cupcakes:
- 1 (15.25 ounce) white cake mix
- 12 ounces of coca cola
For the Cola Syrup:
- 1 cup coca cola
- 1 cup light brown sugar, packed
For the Cola Frosting:
- 1 cup unsalted butter, softened
- 5 cups confectioners' sugar
- 4 tablespoons cola
Instructions
For the Cupcakes:
- Preheat oven to 350°.
- Line cupcake pans with 20 liners.
- In a large mixing bowl add the cake mix and slowly pour in the cola.
- Mix on low 1 minute and then on medium high until combined with no lumps.
- Use an ice cream scoop to transfer the batter to the cupcake liners.
- Bake 19 to 21 minutes or until a toothpick inserted into the center comes out clean.
- While cooling prepare the syrup.
For the Cola Syrup.
- Add the cola and brown sugar to a small sauce pan.
- Bring to a boil and cook 12 minutes; occasionally stirring.
- Dip cooled cupcake tops into the syrup; place on a wire rack with wax paper or parchment paper underneath.
- Make the frosting.
For the Cola Frosting:
- In a medium mixing bowl add the butter; beat until creamy.
- Add the sugar 1 cup at a time alternating with the cola until the frosting reaches the perfect piping consistency.
- If desired add in the optional cola flavoring.
- Whip until light and creamy.
- Fill a pipping bag fitted with a 1M tip.
- Pipe frosting onto cupcakes and add optional toppings.

What a great idea! I happen to have some Loranne cola flavoring. One question though, when making the cupcakes I just and the cola to the cake mix? No eggs or oil?
