Semi Homemade Mini Strawberry Shortcake. Delicious little treats made with store bought pound cake, amaretto soaked strawberries and sweet amaretto whipped cream, all packed in a cute push up pop. The perfect entertaining dessert for your Easter dinner.

- A hostesses dream dessert: The recipe starts with a store bought cake, can be made in advance, is versatile (meaning made into a mini or a full size dessert, see below).
How to Make a Larger Version of this Semi Homemade Mini Strawberry Shortcake
- Cut thawed pound cake lengthwise into thirds (see diagram below)
- Using a 2½ inch round cutter, cut cake into 12 rounds
- On a serving platter, place 1 pound cake round
- Layer with strawberries and whipped cream
- Repeat layers once more
- Garnish with toasted almonds
How to make Mini Strawberry Shortcake Push Up Pops
- Place the pound cake on a cutting board, top facing up (see picture below), slice into thirds and then slice each piece in half for a total of 6 pieces.
- Lay each piece on its side, use a 1¾ inch round cookie cutter to make cake rounds.
- Drop a piece of pound cake into the bottom of 10 push up pops.
- Add a few strawberries.
- Add a small amount of whipped cream
- Repeat the layers.
- Top with toasted almonds.

Semi Homemade Mini Strawberry Shortcake
Yield:
MAKES 12 PUSH UP POPS OR 6 (2½ INCH) CAKES
This dessert is not just cute, it also tastes incredible!
Ingredients
For the Strawberries:
- 2½ cups fresh strawberries, chopped for push up pops and sliced for large shortcakes
- ¼ cup granulated sugar
- ¼ cup amaretto
- ½ teaspoon vanilla extract
For the Shortcakes:
- 1 (16 ounce) store bought (I used Sara Lee) frozen pound cake, thawed
For the Amaretto Whipped Cream:
- 2 cups heavy whipping cream
- ¼ cup granulated sugar
- ¼ cup amaretto
- ½ teaspoon vanilla extract
- ½ teaspoon almond extract
For the Topping:
- ¼ cup almond slivers, toasted
Instructions
For the Strawberries:
- In a medium bowl, add the chopped strawberries, sugar, amaretto and vanilla.
- Stir to combine; let stand (about 10 minutes), occasionally stirring.
For the Pound Cake:
- Slice thawed pounds cake (as shown in the picture) into thirds and the slice each piece lengthwise again. Giving you SIX pieces.
- Lay the slice on its side, use a 1¾ inch round cookie cutter and cut through each piece 4 circles a total of 24 rounds from all slices. Set aside.
For the Amaretto Whipped Cream:
- Pour cold whip cream, sugar, amaretto, vanilla and almond extract into a cold large mixing bowl of a stand mixer fitted with the whisk attachment.
- Whisk until soft peaks form. NOTE: Do not walk away! If you let heavy cream whip too long you will end up with butter and you don't want that.
Putting it all Together:
- Add a pound cake round to the bottom of a push up pop.
- Sprinkle a few strained strawberries.
- Top with a small amount of the whipped cream.
- Repeat layers.
- Top with toasted almonds.
For Large Size Strawberry Shortcakes:
- Slice the pound cake into THREE lengthwise pieces (see diagram).
- Using a 2½ inch round cutter, cut 12 rounds.
- Follow the same directions for the strawberries and the whipped cream.
- On a serving plate, place 1 pound cake round; layer with strawberries and whipped cream.
- Repeat layers.
- Top with toasted almonds.
Notes
PUSH UP POPS: Finding a way to stand up push up pops can be a challenge. I have found that the best way is to use rice. The offers enough stability to keep them standing and is easy to push the pop into.
