Semi Homemade Pantry Chicken Tortilla Soup | This delicious crowd pleasing soup is made mostly with items from my pantry and can easily be made with things from your pantry. It’s a great way to use leftover chicken, canned items and seasonings. This Semi Homemade Pantry Chicken Tortilla Soup makes a great weeknight dinner.
This south of the border tomato based Mexican soup has crushed tortilla chips (as a thickener), chiles, corn, shredded chicken and black beans. Seasoned with ranch dressing mix, garlic powder and cumin.
ADD ANOTHER LAYER OF FLAVOR!
Serve this delicious soup in smaller bowls as an appetizer or large bowls for a main course. Add a gooey cheesy top to the soup. Make sure to add soup to oven safe bowls. Ladle the soup into individual bowls. Sprinkle shredded cheese over the top of each bowl. Place the bowls on a cookie sheet. Turn the oven to broil. Broil until hot and bubbly. YUM!

Add even more flavor with toppings! Ladle this Semi Homemade Pantry Chicken Tortilla Soup into large bowls and top it with more crushed tortilla chips, slices of avocado, shredded cheese and chopped green onion! For a little spice you can also add sliced jalapeno or salsa. Perfect for a Fiesta!

Semi Homemade Pantry Chicken Tortilla Soup
This delicious crowd pleasing soup is made mostly with items from my pantry and can easily be made with things from your pantry.
Ingredients
- 4 cups water
- 32 ounces chicken stock
- 2 (16 ounce) cans pinto or black beans with juice
- 1 (4 ounce) can ortega diced chilies
- 2 cups frozen corn or 1 (16 ounce) can corn, drained
- 2 (16 ounce) cans diced tomatoes
- 13 ounces shredded roasted chicken
- 3 cups crushed tortilla chips
- 1 tablespoon taco seasoning
- 2 tablespoons ranch seasoning
- 2 tablespoons minced onion
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions
Add to a large pot, the water, chicken stock, beans, chilies, corn, tomatoes, chicken, tortilla chips, taco seasoning, ranch seasoning, minced onion, garlic powder, cumin, salt and pepper. Stir together. Cover and bring to a boil. Turn down heat and simmer 30 minutes.
